French toast is the breakfast of champions, right? Okay, maybe not, but it is DELICIOUS and the best way to start the day. We dont eat this keto french toast casserole all the time, but its a total treat when we do.

You can whip it up for breakfast of course, but it also makes a lovely brunch recipe too. Its sweet, but we dont actually use any refined sugar, just powdered erythritol and brown sugar sweetener. They are the perfect combination to give you that amazing French toast that we all are accustomed to and love.

Brunch is my favorite meal of the week and we love having an assortment of sweet and savory such as my Keto Eggs Benedict Casserole or my Sausage and Egg Pie, Low Carb Cinnamon Roll Cake or Almond Crumb Cake, some bacon, and fresh berries.

How To Store Cloud Bread

Cloud bread is best eaten the day they are made.

But if you have leftovers, wait until the cloud bread cools completely to room temperature.

Then, store them in an airtight container or plastic bag. They will keep it for 3-4 days in the refrigerator.

If you want to freeze them, line parchment paper or paper towels between each slice. This prevents the slices from freezing together.

Thaw the frozen cloud bread in the fridge first. Then, toast and serve them again!

What Youll Need To Make French Toast Casserole

There are four key components to this keto french toast recipe. First, is the low carb bread, then a sweet cream cheese filling. Next are a creamy custard and crumb topping.

Despite this having 4 parts it only has 12 ingredients and they are all common ingredients you probably have already if you’ve done any low carb baking in the past. And the recipe comes together quickly!

  • Almond flour – I find the flavor of almond flavor mild enough that it is a great low carb choice for both sweet and savory recipes.
  • Baking powder – Always check the date!
  • Brown sugar sweetener – You can make a white sugar sweetener into a brown sweetener just by adding 1 teaspoon of molasses per cup.
  • Butter – Coconut oil is a good sub if you run out.
  • Cinnamon – Or sub in pumpkin spice for a fall flavor!
  • Coconut flour – Coconut flour works well in combination with almond but can be hard to use on its own. I do not recommend using all coconut flour in this recipe.
  • Coconut milk – From the carton. Or any unsweetened plain nut milk.
  • Cream cheese – Other delicious choices are ricotta cheese or mascarpone.
  • Eggs – They are a must in this. They are the binding agent in the bread and thickener in the custard.
  • Heavy cream – Full-fat canned coconut milk can work for dairy-free.
  • Powdered erythritol – You only need a little bit. If you don’t have any just sweeten the cream cheese to taste with whatever you have on hand.

    Alternatives For Cream Cheese

    Cream cheese is the most common ingredient in cloud bread. But if youre not a fan of cottage cheese, other options include:

    Ricotta cheese

    Mascarpone

    Greek yogurt

    If youre also watching your fat intake, greek yogurt is a great substitute for cottage cheese.

    Mascarpone is one of my favorite alternatives since its less tart than cream cheese. So you can think of it as a buttery croissant-like version of cloud bread!

    How To Make It

    It really is easy to make and bake your own low carb bread at home. Here is all you need to do. I have included a low carb Thermomix bread recipe / method for all our Thermomix users. It is super easy this way and of course, can be replicated in any food processor as well.

    • Mix the yeast with the inulin and water in a large bowl or 2 cup measuring jug. Cover it and leave it in a warm place for 15-20 minutes until it activates. You will know it is activated by a thick foam on the surface of the water. The foam can almost double the volume in the jug.
    • Combine all the ingredients into a mixer with a dough hook, food processor or Thermomix and mix until the dough comes together.
    • Turn the dough out onto a clean bench or silicone mat and knead for 5 minutes or until the dough is soft supple and no longer sticky.
    • Press the dough into a large rectangle the same width as your loaf pan. Roll the dough over to form a log and place the dough seam side down into the loaf pan. Cover with a silicone mat or kitchen towel and leave in a warm place for 1 hour or until the dough has doubled in size.
    • Bake for 45 minutes. Remove bread from baking pan immediately and allow to cool on a wire rack before slicing.

    While Im no dietician, this is definitely something to feel good about eating! There is less than 1 net carb per serving of our zero carb bread.

    The ingredients are all wholesome and simple, and because it doesnt have carbs or sugar it shouldnt cause any blood sugar swings.

    Cloud bread is gluten-free! However, you should be aware that people with dairy or egg allergies cant eat cloud bread.

    What Is Cloud Bread Made From

    Cloud bread is made from eggs, cream cheese, cream of tartar, and a bit of salt. If youd like, you can also add seasonings a bit of garlic powder adds some flavor, or any herbs you prefer.

    Some loaf versions of cloud bread also incorporate almond flour or coconut flour, but were keeping it super simple and easy with these little rounds.

    Many of these ingredients have NO substitutes so please dont ask what they can be changed with.

  • Inulin is prebiotic insoluble fibre sourced from plants. It has sweet properties naturally occurring and can be used to feed and activate yeast as well as be used in baking and sweets. It has around 2.7g carbs per 5g and is around a third of the sweetness of sugar. Other sweeteners like xylitol and erythritol will not activate yeast. However, if you do use sugar or honey the carbohydrates will be eaten by the yeast thus reducing carbs.
  • Oat Fiber is the hull of the oat ground into a fine powder. It is all fibre and hence, the no carb value. It has a nice fine powdery consistency that works well in this bread.
  • Gluten Flour a natural protein found in wheat that is high in minerals and low in carbs. Vital wheat gluten has no substitutes and creates beautiful texture low carb breads.
  • Golden flax meal a delicious tasting meal that adds earthiness to this recipe. Substitute more oat fiber or almond meal if you dont have it, but it is recommended.

    Can I Add Nuts

    Sure! If you add some nuts, it will have a yummy crunch to it. I recommend pecans or walnuts to the bread layer because they are so tasty with french toast. But, you can really add any kind of nut that you enjoy.

    They can burn if just placed on top. If you want them on top add for the last ten minutes, not before.

    What Syrup Should I Use

    I recommend using a naturally sweetened sugar free maple syrup. This keto breakfast casserole is lightly sweetened on its own and really does need either a sugar free syrup, sugar-free jam, or some powdered sweetener on top.

    How To Make Keto French Toast Casserole

    There are only a handful of steps and nothing too hard to make this incredible breakfast casserole. Lets take a look at the easy-to-follow steps:

    First Step: Begin by warming the oven to 350 degrees.

    Second Step: Combine the butter, almond flour, coconut flour, eggs, coconut milk, and baking powder for the gluten free keto bread.

    Spread the batter out into an 8×8 baking dish and bake for 20-25 minutes. Let the bread cool for 10 minutes, then cut it into cubes. You don’t need to wash the baking dish because the bread is going right back into it!

    Expert Tip: This is based on a 90 second bread I use in my Keto Grilled Cheese. If you are in a hurry you can just microwave the bread instead of baking it!

    Expert Tip: You can prepare the bread a day ahead of time. This is great if you are making the french toast casserole for holidays or an event.

    Third Step: Combine the vanilla, cream cheese, and powdered erythritol for the cream cheese filling until smooth. Put the cubes of bread into the baking dish and add cream cheese dollops on top.

    Fourth Step: Prepare the custard by combining the eggs, coconut milk, brown sugar sweetener, heavy whipping cream, and cinnamon together. Gently pour the custard over the top of the bread.

    Fifth Step: Cut the butter into the flour, sweetener, and cinnamon until you end up with a crumb for the topping. Sprinkle the crumbs on top of the casserole.
