  • THOROUGHLY GREASE PAN I mention this below, but cant make this clear enough. You really need to grease your Bundt Pan before pouring the batter in it in order to prevent it from sticking. The two best ways to do this are to use softened butter and use a brush or your fingers to really get every inch of the inside of the bundt pan. I mean every inch and every nook and cranny. Or you can use a baking spray. Just make sure that the spray you use has flour in it.
  • USE A CAKE TESTER Depending on your oven and what cake pan you use, the baking times might deviate a little bit. The best way to tell if this cake is done is to use a thin toothpick or cake tester and insert it into the middle of the cake. If it comes out totally clean, its done.

Here, we’re using melted butter and either raspberry flour or just plain all purpose flour to make sure our cake releases well. There is truly nothing worse than doing all of this work, and having half of your cake get stuck in a pan.     It takes about 2-3 hours for a cake to cool completely, but a bundt cake should only cool 5-10 minutes in the pan before removing it. If you coated your bundt pan with sugar before baking, its important to remove the cake within 15 minutes of removing it from the oven, or else the sugar may harden and act like glue preventing your cake from sliding out easily.

    I recommend letting the bundt cake cool for at least one hour before glazing it with the white chocolate ganache. This prevents the ganache from melting off a warm cake. If you can let it cool for 2 hours, thats even better.

    I have a slight obsession with Nothing Bundt Cakes. We pretty much celebrate all special occasions with a delicious cake from Nothing Bundt Cakes.

    Someones having a birthday? Nothing Bundt Cakes makes the perfect birthday cake.

    Planning a bridal shower or baby shower? What could be better than an amazing bundt cake?

    If I want to surprise my family, I pick up Bundtlets . My daughter and I always choose the white chocolate raspberry bundt cake.

    The only problem with this obsession is that its expensive and theres not one super close to where we live. So I took matters into my own hands and began experimenting until I perfected this white chocolate raspberry cake copycat recipe.

    After making this bundt cake recipe, Im pretty sure youll have a new favorite cakeand youll want to make it on a regular basis! Sorry not sorry!

    There is something amazingly delicious about the combination of the white chocolate bundt cake and the raspberry swirls.

    How To Make Bundtlets Or Mini Bundts

    Spray and flour your bundtlets pans well, then scoop batter into prepared pans (not quite 2/3 full, makes about 14 bundtlets, probably closer to 18 cupcakes.

    How To Make Cream Cheese Frosting

    While your cake is baking, youll want to make this amazing cream cheese frosting.

    Cream your cream cheese and butter together in a medium bowl.

    Add the vanilla and mix well with an electric mixer..

    Add 2 cups of powdered sugar and mix.

    Slowly add the other 2 cups of powdered sugar until you have a thick creamy frosting.

    Add the frosting to a decorating bag or if you dont have one of those handy, a gallon size Ziplock bag will work. Fill the bag and then store in the fridge until youre ready to frost your cake.

    When you are ready to serve the cake, frost it using your decorating bag or snip off the bottom corner of your Ziplock bag.

    Squeeze the bag to frost cake in large frosting strips.

    Then garnish with raspberries and white chocolate chips.

    Ingredients Youll Need For Vanilla Chocolate Chip Bundt Cake

    Yesssss! This recipe uses a boxed cake mix making it a perfect cake to bake with small kids! They can basically do everything themselves except put the cake in the oven.

    Heres what youll need:

    • vegetable or canola oil
    • chocolate chips

    Unlike some homemade cakes, this cake is very forgiving, so if you step away and your kids have added more sour cream no biggie. You wont have a sloppy mess of a cake if the measurements arent exactly right. Thats the beauty of boxed cake mixvery forgiving.

    And I know Nothing Bundt Cakes vanilla bundt cake does not contain chocolate chips, so feel free to leave these out. This cake is a hybrid between their classic vanilla and chocolate chocolate chip bundt cakes. It also ended a tiresome argument about what kind of cake were going to make because one is an adamant vanilla cake lover and the other chocolate.

    • For this recipe we have used this bundt pan. We have had success using these pan every time. Use a good quality bundt cake pan. If you use a different kind of pan you may need to make time/temp adjustments.
    • When making a bundt cake, you want to be sure to generously grease AND flour or spray the cake pan with non-stick cooking spray, making sure to get every little nook and cranny.
    • Before the cake is completely cool, carefully run a knife between the cake and the pan. Turn the plate or platter you will be serving the cake on upside down and place it on top of the cake . Holding the plate and bundt pan together, flip so the plate is now on the bottom and the bundt pan on top. This will hold the cake in the bundt pan. Once upside down, tap the handle of a butter knife along the bottom of the bundt pan . The cake should come out very easily onto the plate.
    • To get the frosting like in the picture, fill a gallon size Ziplock bag or a pastry bag with the frosting and chill for about 30 minutes. Cut off a bottom corner at about a half inch diagonal cut, depending on how big you want the frosting strips. Frost cake by squeezing out the frosting from the outside of the cake toward the middle.
    • If you cant find white chocolate pudding mix, vanilla is a good substitute.

    How To Grease A Bundt Pan

    It is very important to properly prepare your bundt pan so your cake doesn’t get stuck. The worst thing is spending time to make this beautiful raspberry white chocolate bundt cake only to have it stick to the pan and fall apart.

    First, make sure you are using a non-stick bundt pan. That helps significantly. I recommend greasing your bundt pan thoroughly with softened vegan butter or vegan shortening if you have it. Use a bristled pastry brush to ensure you grease every crevice of the pan, and don’t forget about the center part, too!

    You can use PAM to grease a bundt pan , again using a brush to get grease in every crevice. Then lightly coat the pan with granulated sugar. This provides a barrier between the pan and the cake.

    Should I flour my bundt pan? I recommend coating your greased bundt pan with sugar instead of flour, because flour creates a “frosty” residue on the cake surface, and your cake doesn’t always slide out as planned. Sugar will not be very noticeable on your bundt cake after baking and still makes for easy removal. If you choose to use coat the bundt pan with flour, use nut flour like almond or coconut flour.

    If coating with sugar, don’t let your cake cool completely in the pan before removing it, or the sugar can harden and become like glue. You don’t want this! Let the bundt cake cool for about 5 minutes, then slide it out of the pan while the sugar is still warm.

    White Chocolate Raspberry Bundt Cake Tips

    • Grease the Bundt pan: Its very important, especially when using fresh raspberries, to coat the pan generously. Just before adding the batter, coat the pan with a nonstick cooking spray that contains flour. Use a pastry brush to be sure all of the crevices are coated. And dont forget to center tube as well!
    • Let the cake cool in the pan for 10 minutes. Then run a knife around the edges before inverting it onto a plate or cooling rack. If youve turned the pan over and the cake doesnt drop onto the rack immediately, give it a few gentle side-to-side jiggles to help the cake release.
    • Icing/Glazing: For this cake, I love a simple powdered sugar glaze. The cake needs to be completely cool before glazing .
