What Variety Of Lemons Should I Use
The most common lemon varieties we find in our local grocery stores are Lisbon or Eureka lemons. They’re large, highly acidic with thick brightly colored skins. Meyer lemons are more round and the skin is smoother and thinner than regular lemons. The flavor is a cross between a lemon and a sweet orange like a mandarin orange. For this pie I recommend using the regular lemon varieties found in the produce department for the classic flavor profile.

Lemon Meringue Pie Recipe
I’m certain it will come as no surprise that I love the history of food. While I have deep Southern roots and reside in the South, I’ve been blessed to travel the world over and have lived abroad as well. It never ceases to amaze me how some dishes transcend language and border boundaries and this lemon meringue pie is one such example. Whether it’s called a lemon tart or lemon pie, there’s never any doubt that it will be well received. Topping pies with meringues has been traced back to the early 1700’s. Food historians believe that lemon meringue pie originated in the early 1800’s in Philadelphia. It’s thought to have been invented by a pastry chef, who paired a sweet meringue with lemon curd to form this pie we all love.

Consider The Type Of Pie Before Shipping
Not all pies are created equal as you can imagine. An apple pie with a crust will be able to withstand the shipping process more than a key lime pie. When considering pie flavors your loved ones may enjoy, try to choose a pie that doesnt feature cream or meringue, as these pies tend to get compromised during the shipping process.
Some pies that are great for shipping are pumpkin, pecan, and any fruit pies with crust on top. Pies such as key lime, lemon meringue, French silk, and even cheesecake can get a little complicated. While these pies are certainly tasty, the odds of your friends or family members enjoying them intact are less reliable so they should be generally avoided. The sturdier the pie the better because this gives you the ability to pack it into the shipping box as tightly as possible.

San Diego, CaliforniaHave you ever chomped into a juicy carnitas burrito outside a taco truck late at night and thought, you know, this would be so much better if the tortilla was a pie? Helpful Tips For Making Lemon Meringue Pie
To prevent or should I say, to slow “weeping” there are a few techniques that will help. Read below for pie making pointers.
- You can use a frozen or a flaky homemade pie crust for this pie.
- To expedite, you may choose to make the meringue first so that it’s ready to go once you’ve cooked the filling.
- Cook the filling until it’s thickened, don’t skimp. This will help ensure it will set-up for slicing.
- Spread the meringue on the filling while it’s still hot. This helps to steam the meringue from the bottom and seal it to the filling.
- When spreading the meringue onto the pie, take it all the way to the crust, not leaving any of the filling exposed.
- When broiling the meringue, don’t walk away. Placing onto a pan helps when turning to get even browning.
- Allow ample time to chill thoroughly before cutting to allow the filling to fully set.
- When I plan on serving lemon meringue pie, I typically make it in the morning for dessert later the same day.
Insert Pie Into Pie Box And Secure
Once your pie has been properly frozen, its time to place it inside your pie box of choice. As we covered we suggest a pie box, as these boxes are designed specifically to secure pies inside without too much shifting around. Some of these boxes will even have securing features such as locking corners that further fortify your precious pie.
After youve placed your pie inside the box, consider how youd like to decorate the pie box to personalize the gift even more. Grab a gift wrapping paper you know youre loved one will enjoy and finish the look with a beautiful satin bow. Add a gift note to share some kind words and place it inside. These little details will take your delicious present from an awesome experience to a cherished memory.

The Lemon Meringue Pie should be refrigerated at all times. For best results, the pie should be consumed within 3 days of purchase. Before serving, please remove from fridge and leave at room temperature for 30 minutes. Ideally you do not want your cream pie to sit at room temperature for longer than 1 hour.
- While you can freeze a cream pie, it is not recommended. The whipped cream and the custard are both best consumed when fresh.
- To cut a perfect slice, try warming your knife blade with hot water and cleaning it between cuts.
- Never warm a cream pie, as the filling and whipped cream will not survive the heat.
Im very picky about pies. I usually bake my own, but have found that The Pie Hole does as well than my homemade efforts. This is NOT a super sweet, mealy crusted grocery store pie. They are absolutely delicious.
Great quality as always. One of the best lemon meringue pies ive ever had.

Help With Lemon Meringue Pie
Hello, im a new user and a new cook. I really want to make a lemon meringue pie but im vEry scared. Alot of people are saying the pie turns soggy and liquidy, basically it doesnt set. What should i do? Ive watched some videos where chefs have said that the meringue will stay put if i cook it a bit and then whip it. And also i should let the lemon curd cool down before putting it in the pie crust. And i should also blind bake the pie crust. Im going to be using the pillsbury crust, btw. Do i have to blind bake it?
Please ket me know if i have this corrcect:1) my pie filling should be cooled so it sets 2) my egg whites should be cooked to 160 deg and then whiped in the mixer to stiff peaks 3) my pie crust should be baked for 10 mins.
How long should i leave the pie to set? And how long at what temp should i bake? If everything is cooked, should i just bake for 5-10 mins to get the peeks brown? Also, i dont know if it makes a difference, im baking in a small breville convection oven. So the baking is oretty even, i think.
Anyway, sorry for the really long post, ive been trying to find these answers so i finallybregistered to get some answers from the great cooks here :). Thanks!
