Best Key Lime Pie Recipe: Making the Filling – CookingWithAlia – Episode 204

The filling is super simple to make, and it only has three ingredients: cream cheese, sweetened condensed milk and lime juice + zest. I just add the softened cream cheese to a mixing bowl and pour everything over top.

You want to use about 1/3 cup of lime juice. This was the juice of two large-ish limes for me.

Plus, you will want the zest of one of them. I added about 2/3 of that zest to the mixing bowl , and I reserved a little to sprinkle on top later.

Once you have everything in there, you are going to beat it with a mixer.

Itll look lumpy at first. Like this.

No worries, though! A few minutes with the mixer will make it creamy like this. This is where softened cream cheese is key!

Then you pour your creamy filling into the shell, and spread it around to even things out.

And sprinkle the remaining lime zest on top.

Then you refrigerate for a few hours to let everything firm back up. Mine took about 3 to 4 hours.

And you are left with the yummiest dessert. Nobody will suspect how little time and effort you put into it either. This is summer recipe jackpot, my friends.

Garnish with lime slices if you want to fancy things up a bit. Honestly, I did this for the photos. We dont have patience for that in real life.

    Here are a few tips to getting the most juice out of your limes.

    • Store limes in the refrigerator. Leaving them out on the counter hardens the rind and dries out the flesh. Plus, they will last longer in the fridge.
    • Let the limes come to room temperature before juicing.
    • Place the limes in the microwave and heat it for 15 seconds. Heating the fruit helps release its juices.
    • Before juicing, place your palm on a lime and roll it around on a countertop or hard surface. This separates the individual segments inside the lime, making the lime juicer.

    The crust for these key lime bars is my cookie crust recipe with the addition of sweetened coconut. The coconut adds a nice sweet balance with the tartness of the key lime filling and is a perfect pairing. A butter graham cracker crust is the classic crust for a traditional key lime and you can definitely use that instead. But I strongly recommend the sweet nutty flavor of the coconut cookie crust to pair with the key lime.

    Yes, my key lime pie filling is only 3 ingredients. If youve tried my key lime pie bars or mini key lime pies, youll notice that todays filling is a little different. I typically add a little cream cheese to the filling to ensure stability and structure, but decided to skip it today. Were keeping it traditional with this classic key lime pie, which means were using egg yolks, sweetened condensed milk, and key lime juice.

    • My tip: Do yourself a favor and buy a bottle of key lime juice from the store. Theres a brand of bottled key lime juice that I love called Nellie & Joes in most major grocery stores next to the bottled lemon juice. Just make sure youre using key lime juice, not regular lime juice. Otherwise you will spend 100 years juicing 500 tiny key limes yourself. You need an entire cup of key lime juice and yes, it will take you 100 years to squeeze them all!

    So lets start with at the beginning with the graham cracker crust. Because, duh, thats how key lime pie bars should ALWAYS start.

    The crust is such a key component to these bars because it needs to withstand the cutting and hand-holding that happens before they can be devoured.

    Now lets get to the filling. Its a whole lotta lime juice, lime zest, sour cream and a couple cans of sweetened condensed milk . You just whisk it all together, pour it into your pie shell, bake for 10 minutes and voila youve got a key lime pie that will blow your family and friends away.

  • Graham Cracker Crust: We use my favorite graham cracker crust for the base of todays pies. I use this crust recipe for pies, cakes, cheesecakes, and more. The buttery and slightly crisp texture is the exact contrast I want with these little key lime pies. You only need 3 ingredients butter, graham crackers, and sugar so you know its good. To ensure a compact crust, make sure you press the mixture tightly into each individual muffin cup. Youll use a little over 1 Tablespoon of crust in each individual pie.
  • Key Lime Pie Filling: Our key lime pie filling is tart, sweet, and creamy exactly as key lime pie should be. Cream cheese acts as the base of the filling, providing a little structure and a subtle cheesecake flavor. Also adding a little structure, as well as a rich texture, are egg yolks. To those, well add sweetened condensed milk and key lime juice. For best flavor make sure you use key lime juice, though regular lime juice works in a pinch.

    Its hard to get the pie to set up the right way with just acid and eggs, and the acid helps the eggs cook up more smoothly, so a bake cycle is beneficial to the whole process. Baking the pie at 325°F until it reaches an internal temperature of 145°F is perfect. Using a Thermapen ONE to verify the temperature is far more accurate than shaking the pie to check for wiggle, and will help you to not overcook it. Use one and youll never be in doubt of whether your pie is done or not.
