What You Need To Make This Recipe

Bananas you have to use overripe bananas for this to work. They should have brown and black spots all over and be soft so they are really easy to mash. Overripe bananas are extra sweet and soft making them perfect for baking with.

Vanilla use vanilla extract for a real vanilla taste and stay away from vanilla essence which is synthetic.

Butter softened butter is a must so bring it out of the fridge in advance. Its creamed together with the sugar and the only way to do that is by using softened, room-temperature butter.

Sugar I use granulated sugar for this but brown sugar will also work.

Chocolate chips I love to use semi-sweet chocolate chips because banana bread is already really sweet. If you want you can use bittersweet chocolate which will also be delicious or even milk chocolate if you dont mind the extra sweetness.

Salt even in sweet recipes salt is an important ingredient, you dont need much at all but it really enhances the flavors!

The Best Chocolate Chips For Baking

We used semi-sweet chocolate chips since the bread was already plenty sweet with the overripe bananas and bit of sugar, but it really is based on preference. You can use milk chocolate for a sweeter bite or even bittersweet chocolate chips to cut down on the sweetness.

We used standard-sized baking chips but mini chocolate chips would also work. Use between 2/3 to 3/4 cup of mini chocolate chips based on how sweet your like your bread.

  • Mash your bananas well with a fork. Its fine if there is a few lumps.
  • The batter should be thick and lumpy once all of the ingredients are mixed through. You may be tempted to add more liquid, but you wont need it. This banana bread is perfect.
  • Do not be tempted to over mix!
  • Use a pale coloured loaf pan light grey or white is ideal. Dark or black loaf pans are known to darken the bottom of cakes or loaves.
  • Line your loaf pan with parchment paper. Leave a 3 inch overhang to make it easy to pull and lift the banana bread out of the pan.

Pre-heat oven to 350F / 180C. Grease or line a 9 x 5 loaf pan and set aside

In a bowl, add the bananas and mash with a fork until fairly smooth

Add in the melted butter and stir until well combined

Next, add the sugar, egg, vanilla, baking soda, and salt and stir to combine. Add the flour next and fold it in until the batter is smooth

A Note On Salt And Oven Temperature

It is important to note the type of salt that is called for in a recipe. I use Diamond Crystal salt throughout my recipes – if you use a different sort of kosher salt or regular table salt you will need to adjust accordingly as some salt is ‘saltier’ than others. Morton’s salt is twice as salty, so you will need half the quantity. Same goes for a regular table salt. I am working to get gram measurements throughout my recipes for salt but still getting there.

All oven temperatures are conventional unless otherwise stated. If you are baking on fan / convection, you will need to adjust the temperature. An oven thermometer is a great investment to ensure that your oven is the correct temperature.

  • Dark chocolate chips I love using mini dark chocolate chips in my muffins, but you can use regular if thats all you can find. Semi-sweet works great.

Tips For The Perfect Banana Bread:

  • Pan Size: I recommend using a 9×5-inch or 10×6-inch baking pan for this bread. Or, use two 8×4-inch pans or three mini loaf pans.
  • You can make chocolate chip banana bread muffins using muffin pans.
  • You can substitute soy or almond milk in this bread, but add 1 teaspoon of vinegar so the baking soda is activated.
  • It will brown a lot on the outside while its baking. If its browning too much, reduce the oven temperature by 25°.
  • How you know banana bread is done: It will form a nice crack on top. Once a toothpick comes out mostly clean right outside the crack, the bread is done.
  • Cooling: Let it cool a bit before slicing or the chocolate chips will create holes in the bread.
  • Why does my banana bread collapse? If your crack collapses after baking, its because it was underdone. Its still good and will have a little gooey spot right on top, but for best results do the toothpick test right next to the crack!

Frozen bananas discolour and will leach water once defrosted. This free water can make the loaf soggy, and it may bake with a dense gummy layer on the bottom. Also, bananas take on lots of unpleasant freezer flavours that can alter the taste of the loaf.
