You can make almond milk with pudding, yes.

This is great news for anyone who doesnt like to use dairy milk, and who has had problems making pudding with a plant based milk before.

However, unlike with most recipes, you cannot simply swap the dairy milk for almond milkyou will need to adjust the ratios.

If you just put the same amount of almond milk in as you would dairy milk, the recipe will fail and youll get very thin pudding.

You may also need to add a couple of other ingredients to encourage it to set properly, which we will cover shortly.

Almond milk pudding is a bit more work than regular pudding, but it can be done if you are determined!

The reason that a straight swap wont work in pudding is that almond milk has a higher water content than dairy milk does.

That means its harder for the dry ingredients to absorb it and create a stable, thick mix.

If you simply add almond milk, you are essentially adding extra water, even if the volume of the liquid is the same.

Its reasonably easy to solve this by either putting in less milk, adding a second dry ingredient, or a combination of these two methods.

If you do this, you should end up with creamy, delicious pudding to enjoy every time you make it!

The other day I was riding in the car with my husband and “Baby I’m-a Want You” by Bread started playing. Yeah, I’d never heard it before either. “This is Bread,” my husband announced. “Baby I’m-a Want You.”

“That’s how I feel about bread too!” was my response.

I love bread. The food, I mean. The song was okay I guess. I can’t remember. I got to thinking about bread , so I kind of zoned out while the song was playing.

The universe heard my plea, because baby, I’m-a got a freezer full of bread. I keep making bread and then find that my small household can’t quite finish off a loaf before it starts to get old.

It’s okay though, because there are plenty of delicious ways to use bread that’s over the hill. Ribbolita is my new favorite savory way to use up old bread. And this vegan bread pudding is my new favorite sweet way!

Conventional bread pudding is heavy on eggs and dairy, so it seems like it’d be a tough dish to veganize, but it’s not! We’re using a mix of non-dairy milks to create a creamy base, then we’ll thicken it up with cornstarch, which works great as an egg substitute in recipes like this one.

  • Place the bread cubes in a large mixing bowl and set aside.
  • Add all the remaining ingredients to a blender and blend until smooth.
  • Pour the mixture all over the bread, stir and set aside for about 1 hour at room temperature.
  • Preheat the oven to 350ºF or 180ºC.
  • Place the pudding mixture in a 9×9 inch baking dish and bake for 60 to 70 minutes or until the bread pudding is golden brown on the outside and cooked on the inside. Baking time may vary depending on your oven, my pudding was ready in 70 minutes. If the pudding is golden brown but uncooked, cover with some aluminum foil and cook until it’s ready.
  • Remove from the oven and allow to cool slightly.
  • Serve your vegan bread pudding with some brown sugar glaze, nuts, or even fruits.
  • Store the leftovers in an airtight container in the fridge for 5-7 days, or in the freezer for up 2 months . To thaw, place the bread pudding in the fridge until completely defrosted. For best results, reheat in an oven rather than a microwave to maintain the proper texture. It also can be reheated directly from frozen.

How To Make The Caramel Sauce

You can easily whip up the caramel sauce while the bread pudding is in the oven following the steps below:

1. Heat a small saucepan over medium-high heat on the stove and add in all of the caramel ingredients except for the almond butter.

2. Whisk until combined then once boiling, reduce heat to low and let the caramel sauce thicken at a simmer for 10 minutes, it will be bubbling.

3. Whisk in the almond butter and stir for another 2 minutes until thick and silky then transfer to a jar.

4. Drizzle caramel sauce, while still warm, over the bread pudding.

*Store any remaining caramel sauce in the fridge and warm before serving as it will harden when cold.

Properly stored, it should keep up to 5 days. To reheat it, warm it briefly in the microwave or in a low temperature oven.

You can also freeze bread pudding. After it has cooled completely, place it in an airtight, freezer-safe container. It should keep up to 3 months. Thaw overnight in the refrigerator.
