Maine Pie Makers Worth A Slice Of Your Time

By Annemarie AhearnThis story originally ran in our .

Nothing smells and tastes more like summer in Maine than a berry pie: sweet fruit bubbling in a buttery crust, its golden finish daring us to dive in before it sets. The harvest is half the fun, long afternoons spent picking and resisting the urge to snack on berries still warm from the sun. With its acidic soil and plenty of days of fruit-ripening sunshine, Maine is fertile berry country. In the barrens along rocky hillsides, wild blueberry bushes begin fruiting in early July. Later in the month, raspberry bushes grow thick and thorny, decorated with ruby jewels. In late August, the blackberry brambles skirting old stone walls bear fruit with abandon. What better way to embrace the season than by filling a pie or patronizing one of Maines expert pie makers? Ready your forks and remember that Maines flaky summer treats are best enjoyed outdoors and with friends.

During our VBT tour of Acadia, guests participate in a “blueberry pie” survey. During the week we have several opportunities to taste delicious blueberry pie and guests decide which is their favorite.

Maine is about all things blueberry. Blueberry pie made with wild Maine blueberries is the official state dessert of Maine. Youll also find wild blueberries in pancakes, muffins, cocktails, beer, jam, cobblers, crisps and ice cream! The Spot: Mabel’s Lobster Claw, KennebunkportThe Dish: Blueberry pieLocated in idyllic Kennebunkport, Mabel’s is a Maine institution. While dishes like scallop-stuffed baked lobster and über-local lobster rolls are the main draw, the real speciality is blueberry pie, on the menu since Mabel first opened her doors in 1952. The restaurant serves over 1,200 pies every summer to locals and visitors alike. The secret to their slices? Mabel’s jam-packs each pie with an extra helping of local blueberries so that they overflow with juicy berry filling.

Traditional Maine Wild Blueberry Pie

  • 6Cups Blueberries

Make the Pie Dough

  • Scoop the flour into a large mixing bowl, and measure in the salt.
  • Use a knife to cut in the butter, then, using your fingertips, crumble up the butter into small, pea-sized pieces. It should be evenly distributed in the flour without any large pieces of butter left. Alternatively, you can use a food processor and pulse the butter into small pieces.
  • Pour in the cold water and mix with a spoon until everything starts to come together into a slightly sticky dough. There should be no dry spots of flour, but if the dough still feels too dry or crumbly, add an additional tablespoon of cold water.
  • Form the dough into two evenly sized balls, and wrap each in cling wrap or a clean, dry recycled plastic bag. After wrapping them, flatten them into a disc shape.
  • You will only be using one of the two crusts for the pie, so place one in the fridge and if you do not have plans for the other one within the next few days, place it in the freezer. If you plan on making two pies, or using the second pie dough for something, place them both in the fridge. For the blueberry pie, the dough needs to chill for at least two hours.

Blueberry Pie Filling

Bake and Assemble

For the Whipped Cream

  • Combine the heavy cream, sugar and vanilla in a large mixing bowl and whisk on high speed until the cream is heavy and holds together, about 3 minutes. Take care not to over whip or your whipped cream will turn into butter!

Best Blueberry Pie Ever

This spot is great, one of those wonderful roadside attractions that I love! There are lots of trinkets, souvenirs, and blueberry products available for sale inside. But the best is the blueberry pie! It has a tender, flaky crust and is loaded with Maine blueberries. When I was there, I also picked up two five pound boxes of frozen blueberries. They are all separate so you can scoop out a cup or more and then let them thaw. In season, you can also get the blueberries fresh! I’d love to see their mini golf course start up again. I think it’d be a fun diversion when traveling!

Wild Maine Blueberry Pie Recipe

Pie Dough

  • 4 cups all purpose flour
  • 4 sticks butter grated on a cheese grater
  • 1 teaspoon salt

1. Place flour, salt, sugar and grated butter in a big mixing bowl.

2. Rub the flour and butter together between the tips of your finger until the fat is worked into the flour and looks like oats.

3. Add cold water and blend quickly with one hand, fingers held together and slightly cupped as you rapidly gather the dough into a mass.

4. Sprinkle up to 2 tablespoons more water on any of the remaining bits and add to the main body of the dough. Press the dough firmly into a ball.

5. Place the dough on a lightly floured surface and with the heel of your hand push the dough away from you so it smears across the board. Knead until it comes together in a nice ball. Split into two balls! Refrigerate for at least 2 hours.

6. Roll out dough into a 14 inch disk, and press into pie tin. Stephanie recommends sandwiching the dough between two sheets of parchment to do so, for an easier and smoother rolling process.

7. Blind bake the bottom shell only at 400 degrees for 8-20 minutes or until the dough is set. Remove and let cool.

Blueberry Filling

  • 1/2 teaspoon salt
  • 1 egg, beaten for egg wash

1. Wash berries and stir in flour, salt and sugar. Sprinkle with some lemon juice to taste. Set aside.

2. Pre-heat oven to 400°. Roll out remaining dough into a 12 inch disk.

4. Bake until the crust is golden brown and juices are bubbling, about 40-50 minutes. Let cool.
