I just love a good old fashioned chicken pot pie, especially during the colder months. Seriously, nothing screams comfort food like a homemade chicken pot pie. The hot creamy pie filling with juicy chicken meat, and mixed vegetables. It just doesnt get any better. I personally love all types of chicken pot pie . However, When I make chicken pot pies, I like to keep it easy. Instead of using crust, I prefer to make chicken pot pie with biscuits.

The ingredients for this pie are simple, and you basically just throw everything together. It tastes like you spent all day making it though!

I make it almost exactly as she does, and have used all canned ingredients, including the chicken. Other times, if I have the time, I will use shredded chicken instead.

How To Make Chicken Pot Pie

Chop or shred leftover chicken for pot pie. I prefer to use only white meat in my chicken pie, and two chicken breasts usually provide enough meat for a pot pie.

If you dont have leftover chicken to use for this recipe, you can poach two chicken breasts.

Next, whisk together the cream of celery soup and chicken broth in a sauce pan over medium heat. I like the flavor of cream of celery soup, so thats what I use when Im making this easy pot pie recipe. But you can use whatever soup you have on hand, including cream of chicken or cream of mushroom.

When Im making this recipe, I never measure things precisely. Its very forgiving.

But youll probably need about a cup of broth. I prefer a creamier pot pie with a juicy gravy. I will sometimes add a tad more broth once Ive mixed in the chicken and vegetables to ensure the filling isnt too dry.

Once the broth and soup are combined and creamy, add in the mixed vegetables to soup mixture.

Cook until heated through, and then stir in the chicken.

Season with salt and pepper, if desired.

Next, press one pie crust into a deep dish pie pan. Trim the edges, if necessary.

Spread the filling into pie crust. Cover with the remaining crust, crimping and trimming the edges, as necessary.

Cut slits in pie crust to let steam escape, or use a pie bird.

For a browner crust, brush the pie crust with an egg wash, avoiding the edges of the crust.

  • Preheat oven to 450°F.
  • Melt butter in a oven-safe skillet over medium-high heat. Add chicken and sprinkle with salt and pepper. Cook until chicken is browned, about 2 minutes each side.
  • Add flour and whisk to combine. Slowly add chicken stock while whisking the skillet. Whisk until well combined. Add in vegetables and cheese. Stir to combine. Reduce heat to medium. Allow mixture to come to a boil, stirring occasionally.

    • Chicken Broth I always keep cans or cartons of chicken broth in the pantry to use in recipes.
    • Cooked Chicken Leftover roasted chicken, rotisserie chicken, grilled chicken or poached chicken works for this recipe.
    • Deep dish pie pan For best results, use a deep dish pie pan since the chicken pie has a lot of filling.
    • Salt and pepper

    Melt some butter over medium to low heat, then add flour. Youll need to stir it constantly with a wooden spoon in a figure eight motion for even cooking.

    You dont want it to overheat and burn so consistency is important. In 3 to 5 minutes, youll have a light roux that should puff slightly. Then youll want to add your liquid and continue on with your recipe.

    The first time I made this recipe it was not the best-looking dish, but it was easy to make and full of flavor. It was actually such a big hit at my house that we had no left-overs . So this time I decided to try it again and it was a success again…plus it looked much prettier

    *Quick Note- if you do not want the crust on the bottom, then you can cook everything in the 10-inch cast-iron pan and just place the one pie crust on top.

    Easy Chicken Pot Pie Ingredients:

    • 1 ½ pounds chicken tenders
    • 1 cup frozen chopped onions
    • 2 cloves garlic, minced
    • 1 cup frozen peas and diced carrots
    • 2 tablespoons all-purpose flour
    • 2 cups low-sodium chicken stock
    • 1 cup heavy cream
    • 2 store-bought pie crust, unbaked and thawed if frozen
    • 1 egg, lightly beaten

    Instructions:

    Special equipment: 10-inch cast-iron pan.

    Spray 10-inch cast-iron pan with non-stick cooking spray and unroll 1 pie crust to cover the bottom of the pan. Set aside.

    Preheat the oven to 400 degrees F.

    Sprinkle the chicken tenders with paprika, sage, oregano, salt and pepper.

    Heat a separate skillet over medium-high heat and add the olive oil. When the oil begins to swirl, add the seasoned chicken and saute until cooked through, about 4 minutes on the first side and 3 minutes on the second side.

    Once the liquid has thickened, stir in the heavy cream. Season with salt, if needed.

    There are a few steps to go through to make your pot pie filling. But dont be intimidated, they are quite simple and it comes together in about five minutes time.

    First, start by cooking your onion and garlic in olive oil.

    Remove those and set aside to be added back later.

    Next make a roux by simply melting butter and then whisking in flour.

    In goes the softened cream cheese. Its going to look like a thick, lumpy, mistake. Dont worry, youre on track still.

    Now its time to start adding liquids. Gently pour in chicken broth and whisk to combine and smooth out mixture.

    Make sure to keep whisking to smooth it all together. Add your seasonings.

    Then in goes milk, and more whisking, followed by cream and, you guessed it, more whisking. Make sure to taste test to see if you need any more salt, pepper, thyme or other seasonings.

    Finally, its time to add our veggies and chicken, as well as return the onions and garlic to the filling.

    While this delicious goodness is simmering, I prepare my pie crust.

    Which means I open the box and roll it out. Were saving time here, people!

    Youll notice my pie crust doesnt come all the way up the edges. Given that this really serves up more like a chicken pot pie casserole than a slice of pie, this is okay with me. If you want to make those edges perfect, you do you.

    Top with the remaining pie crust. I cut four small slits into the center to give steam a chance to escape.

    So I think its no secret that Im a casserole gal. I love creamy, saucy casseroles filled with scrumptious ingredients and baked until bubbly. Theyre awesome!
