I used all-purpose for this crusty artisan bread, but you can use bread flour if you like.

You can also use part whole wheat flour I recommend substituting 1 cup of the AP flour with whole wheat. A 100% whole wheat loaf has not been tested, but it might work.

I havent tried using a gluten-free flour mix for this and therefore cannot recommend it. Heres a gluten-free artisan bread that might be helpful for you!

And finally, you should never substitute a non-flour flour, such as almond flour or chickpea flour, for AP flour. Those wont work with this bread.

Expert Tips And Tricks

  • Please dont reduce the sugar. The yeast needs the sugar to help it grow thats what makes the dough rise.
  • Make sure you are properly measuring the flour. Dont scoop packed flour from the bag. This will result in dense, overly dry rolls. Spoon and level the flour and then add more if needed. You can always add more, you cant take it away once it is added.
  • Try using salted butter for more added flavor.
  • Make sure you let the dough rise in a warm place. Because we live in north Idaho, I will often set the bowl near the woodstove, or wrap it with an electric blanket to keep the dough nice and warm. I have seen warming mats for making bread rolls on places like Amazon. I have found that the electric blanket works quite well and is a fraction of the cost.
  • These can be made ahead and baked the next day.
  • It is not necessary to line the baking pan with parchment paper prior to baking.

  • In a large bowl, whisk together the flour, salt and yeast until mixed. Pour the warm water and use a spoon to stir until the dough forms a ball. The mixture will be wet and sticky to the touch.

    All you need is:

    FLOUR: Bread flour results in a softer, fluffier bread because of the higher protein content. Regular all purpose or plain flour also work really well, with the texture changing only a little. If using wholewheat flour, use about 1/4 cup less flour and add more as you go, if needed.

    SUGAR: Yeast feeds on sugar and starch, the perfect pairing in bread dough. The mix releases carbon dioxide gas, causing the bread to rise while baking. The bubbles push the dough up and out, creating a soft and spongy texture.

    YEAST: We have tried this recipe over the years with dried, instant and rapid-rise. We found the dried yeast did not need activating before mixing it through the dry ingredients. If hesitant, feel free to activate it first in the warm water and oil for a couple of minutes before adding the rest of your ingredients.

    OIL is what makes our bread even softer. You need this sneaky little addition for a silky, soft crumb.

    WARM WATER: Not too hot or it will kill your yeast. 130°F or 55°C is the perfect temperature. You can also do the finger test: if you dip your finger in the water and its nice and warm, its perfect. If it burns, let it cool down slightly until warm.

    MIX ALL OF YOUR INGREDIENTS TOGETHER UNTIL YOU GET A WET AND SLOPPY MESS

    How To Make It

    First, stir together all of the ingredients in a large bowl to form a loose dough.

    Grease the dough a bit, cover it tightly with plastic wrap, and set it aside overnight, twelve to eighteen hours.

    The dough will g-r-o-w in size until its nearly doubled.

    When youre ready to bake, get your Dutch oven with the lid heating up in the oven. This will take at least a half hour.

    While the oven is heating, remove the dough from the bowl and put it on a floured surface. Dont be afraid to add a fair amount of flour to the counter, your hands, the top of the dough, etc. Use a dough scraper if you have one. Fold the dough over a few times, forming a dough ball. Youre not kneading the dough, rather, youre shaping it. It should only take a minute or so.

    Place the dough on a wide strip of parchment paper and reshape it if necessary. It does NOT have to be a perfect ball. Cover it and let it rise until the oven is hot.

    When the Dutch oven is good and hot, carefully remove it from the oven. Please, please be careful! Using an oven mitt, remove the lid from the pan and set it aside. Uncover the dough, and grabbing the corners of the parchment paper, transfer the paper and dough ball to the Dutch oven, just nestling it right in there, paper and all.
