Milk Bar makes perishable treats which unfortunately arent returnable. Can you imagine all the things that could possibly go wrong with you trying to send a cake back through the mail? It just wouldnt work, nor would it be sanitary.

The only situation that the company does issue refunds is if something was wrong with your order. In the rare case that this does happen, all you need to do is get in contact with the brand and let them know. From there, they may request photos of the affected order, and give you the option of a refund or replacement.

Make The Oatmeal Cookie Crust

  • Preheat oven to 350°F. Line a sheet pan with parchment paper.
  • Combine 57 grams of the butter, 38 grams brown sugar, and the granulated sugar in the bowl of a stand mixer fitted with the paddle attachment and cream together on medium-high until the mixture looks fluffy and pale yellow, about 2-3 minutes. Scrape down the sides of the bowl, add the egg yolk, and mix on medium speed until the sugar granules dissolve and the mixture looks very pale , about 2 minutes.
  • Turn the mixer to low speed, and add the flour, oats, baking powder, baking soda, and 1 gram salt. Mix just until the dry ingredients are fully incorporated, about 1-2 minutes. Dump the mixture onto your parchment lined sheet pan and flatten it out with your hands until its about ¼ inch thick. It wont come close to filling the sheet pan, and its fine if its an irregular shape as long as the depth is mostly even . Bake until golden brown at the edges and set in the middle, about 15 minutes. Cool completely.
  • When the cookie is cool, break it into pieces and add them to the bowl of a food processor. Add the remaining brown sugar and salt and pulse until the mixture is broken down into fine crumbs.
  • Melt the remaining 27 grams butter. Transfer the crumbs to a small mixing bowl and add the butter and mix until you can form the mixture into a ball. Press the mixture evenly along the bottom and up the sides of your pie tin and place on a sheet pan.

    Who Is Milk Bar For

    Milk Bar transforms nostalgic flavors in its homestyle bake goods into cant-live-without-them combinations. Theyre like the treats your grandma used to make, but theyre also modernized in a way that punches up the flavors.

    To say Milk Bar treats are for those who want to indulge is a pretty blanketed statement, but to us, theres eating a cookie, and then theres eating a cookie. Its the eye-closing, time-transporting difference that quality flavors and unique mixtures and textures bring that turns eating dessert into a truly remarkable indulgence.

    The Momofuku Milk Bar Pie was developed in 2008 by Christina Tosi. This was one of the original pies Tosi created for Milk Bar consisting of an oatmeal cookie crust and a gooey, buttery filling. The original name for the pie was Crack Pie which the company changed to The Milk Bar Pie in 2019. The pie itself remains the exact same.

    You read the title correctly. This is a Christina Tosi recipe and I surmise this pie and the real thing have a fair amount in common.

    The addictive quality, thinking about it when you shouldnt be, and wondering when youre going to get it again are likely common themes for both. I can say definitely that all rings true with regard to crack pie.

    Like all of Christinas recipes, there are multiple steps and recipes within recipes but the results were worth it.

    First, lets talk about the crust. Its starts as a sheetpan-style giant oatmeal cookie slab thats made from butter, brown and white sugar, an egg yolk, flour, and oats. The big cookie slab is spread about 1/4- inch thick onto a sheetpan, baked for 15 minutes, cooled, and then destroyed.

    Thats right, after cooling, the cookie is crumbled up with a bit more brown sugar and more butter, and packed into a pie plate as the crust.

    After packing the crust in, I made the filling, halving her recipe for the filling. I made the full amount of cookie because the extra was easily tossed into lunches and gobbled as snacks but I didnt need two whole pies laying around so halved the filling amount to make just one pie.

    Too much temptation being around that much Crack otherwise.

    The filling is made with heavy cream, 4 egg yolks for each pie filling vanilla extract, white and brown sugar, milk powder, and she also called for 1/4 cup of corn powder across two pies.

    If you are not a fan of sweet desserts, this is not for you.

    Then Make The Oat Cookie Crust

    • Crumble the cookie : In a large bowl, break the oat cookie into small crumbs resembling wet sand.
    • Mix in salt and sugar: Add the brown sugar and salt and stir to combine.
    • Stir in butter : Next, add the melted butter and use a rubber spatula to stir and press the mixture against the sides of the bowl until a cohesive mass forms.
    • Adjust butter: If the crust is not moist enough to form a cohesive mass, melt an additional 1 to 1½ tablespoons of butter and mix in as before.
    • Pack the pie plate : Divide the oat cookie crust between two pie plates and press firmly into the pie plates, making sure the bottom and sides are evenly covered.

    Taste And Texture: Frosting

    In the Netflix episode, Christinas rationale for not frosting the sides is that its simply unnecessary. Now as a passionate cake-lover, I thought this would be appalling. Frosting is easily the best part of the cake, right?

    Well, most cakes.

    This concern was addressed head on, and Im happy to report that the many layers of cake make up for the lack of outer layer frost. However, be warned of the misleading use of CREAM CHEESE in this not-so traditional birthday cake.

    Expecting the usual vanilla buttercream that everyone pairs with a birthday cake, I was thrown astray when I finally determined the root of the bitterness my mouth was experiencing. The light use of cream cheese in Milk bars frosting was certainly not something I anticipated . And while Im a huge fan of cream cheese frosting, I have strong opinions about it belonging on a white confetti cake. Should this cake ever be made in my kitchen, it will be frosted perfectly white with some sort of vanilla buttercream .

    Thus, due to the sheer unpleasant surprise of the tang in this frosting, Ive scored it 2 out of .

    Dont try substituting any of the ingredients in this Crack Pie recipe. You need all the ingredients listed below to make an authentic Momofuku Crack Pie.

    If The History Channel created a Food That Built America 00s Edition episode, Milk Bar and its founder Christina Tosi would be top billing. I mean, cmon: you cant deny Compost Cookies, Cereal Milk Soft Serve with Cornflake Crunch, and Crack Pie were unlike anything wed ever seen until she burst onto the scene.

    The first Milk Bar bakery opened in NYC in 2008, and I would have kind friends haul back packages of cookies for me until I could see that neon pink cursive sign for myself years later.

    So, whats the big deal? Tosis James Beard-winning culinary genius is tapping into nostalgic flavors like cereal milk and creating the perfect * chefs kiss * balance of sweet and salty. Ive found this true in all her delicious desserts at her flagship bakeries to her newest grocery store items.

    The latest to hit shelves are Milk Bar Ice Cream Pints in four glorious flavors that are sure to make OG and new fans giddy. Heres the rundown:

    I figured they all be legit because of the Milk Bar brand. However, I also had a good feeling because the receipt detailed Frozen Custard, which signaled to me that this would be full flavor compared to an airy, less than 10% milkfat frozen dairy dessert.

    My husband and I recently had a weekend away and I read Momofuku Milk Bar by Christina Tosi. I bought the cookbook thinking that Id add it to my collection but that Id probably never actually make one of the recipes. You see the recipes are complex, have many steps and are all time consuming. However once I started reading the cookbook I was sucked in and by the time I finished the book there were many recipes that I knew I had to try!

    The first recipe that Ive made it this one: Crack Pie. As the name implies, its a very addictive pie and I have to agree with Christina that its the corn powder thats the secret ingredient that completes the pie.

    My biggest takeaway from making this was was to never throw cookies away! They make awesome pie crust. Im not sure why Ive never thought of this before but the next time I have cookies past their eating prime Im going to turn them into a crust!

    If you have time to spend making this from scratch, I recommend doing so. Chances are that youll learn something along the way!

    A Quick Ranking Of The Milk Bar Cookies:

    1. Compost Cookie: Proof that putting salty things with sweet things never fails. EVER. 2. Confetti Cookie: Honestly, I am a sucker for the flavor of confetti cake, which might make me basic, but Im too old to care. 3. Blueberry & Cream Cookie:Though it doesnt taste like the top of a blueberry muffin as they claim it does in its description, this cookies intense blueberry flavor and milky flavor is inherently satisfying. 4. Cornflake-Marshmallow-Chocolate-Chip Cookie: This tastes like someone forgot to pack graham crackers for Smores and just made do, in a good way. 5. Best Freaking Cookie: Objectively not the Best Freaking Cookie. 6. Corn Cookie: Another winner in the oh wow, this tastes a lot like another thing I like category. 7. Chocolate Chocolate Cookie: Just not a big double chocolate guy, sorry. 8. Perfect 10 Cookie: Maybe Perfect 8th Cookie is more accurate .

    Not As Great Desserts Aka What To Avoid:

    The BDay Truffles, which are essentially little bite-sized cake bites, were too damn sweet for me, mostly because I think the addition of white chocolate was overkill. And all of the lattes I tried, which basically just riff off of the various hit desserts seemed like they, too, veered into Stunt Tween Order at Starbucks territory. Now, if this was the intention, well done. But they had little of the payoff of the actual desserts they mimicked.

    Tips For Making Crack Pie

    I would halve the entire recipe, not just the filling portion, right off the bat

    I would use a 9-inch, not 10-inch, pie plate as she recommends. I felt it was just barely enough filling and dont attribute it to halving the recipe. I also used more than half the cookie for the crust and feel a 9-inch would be better.

    I would underbake the cookie crust by about 25-30% of what she recommends so that it crumbles easier and packs into the pie plate easier plus it gets baked a second time anyway as part of the pie.

    I would consider buying a store-bought graham cracker pie crust and just making Christinas filling if I wanted to take this recipe from 2 hours of standing on my feet to 15 minutes by just making the filling.

    Tosi recommends baking the entire pie, crust and filling together, for 15 minutes at 350F, opening the oven door and allowing the oven to cool to 325F, and then baking for about 5 more minutes after the oven temperature has reached 325F .

    I needed to bake mine for about 31-34 minutes of total baking time in order for the center to set . Also I was only baking one pie if I had two in the oven, it would have taken even longer.

    This recipe lives up to its name and everyone should try this pie at least once!! Its a fairly involved recipe from Christina Tosis Momofuku Milk Bar cookbook, but I promise the effort is worth it!
