Will This Work In Any Breadmaker
The correct answer is that I have no idea! Ive only ever owned and used the two breadmakers listed above so I can only speak for those.
The fact that they both have a gluten-free bread setting also means I cant really speak for the outcome of this recipe in machines that dont have such a setting.
Im told by you lovely, helpful people that most breadmakers have a rapid setting, which might work well instead, but again, I cant make any promises.
If you guys could let me know your make and model, as well as which settings you used below in the comments, that would be infinitely helpful to myself and others. As long as it turned out well of course
What If My Bread Machine Does Not Have A Gluten
If your bread machine does not have a gluten-free setting, you will want the setting that only has one mixing cycle . Gluten-free bread does not need a second rise.
If you dont have a feature with only one mixing cycle, try to see if you can override the pre-programmed settings for a 20-minute mix cycle, 1-hour rise cycle, and 1 hour-bake cycle.
You can also check out your bread machines manufacturer website to see if they have a gluten-free setting suggestion for their bread machine. Some bread machine makers have instructions for a gluten-free bread setting for their older models.

Does Gluten Free And Dairy Free Bread Need To Rise Twice
It is often said that in order to make the best-tasting gluten free bread, the dough should not be allowed to rise twice. Because gluten free bread cannot handle a 2 rise cycle. It can only create a small amount of lift without gluten. But that will be lost too if it is punched down and allowed to rise for a second time. However, there are several recipes where the dough has successfully risen twice. So, maybe the success rate of it rising twice varies with respect to the change of recipes. But on average, it does not need to rise twice.

What Gluten Free Flour Is Best For Bread
When it comes to gluten free bread, you need a blend of gluten-free flours. You dont want to use just one type of gltuen-free flour, say, like alllllll almond flour.
To mimic the structure of wheat, we want to combine whole grains, starches, and gums.
I make my own flour blend that you can find the recipe for here. Bonus, its way cheaper this way.
If making your own flour is too daunting right now, I recommend looking for these ingredients.
- Find a flour that includes higher amounts of whole grains, like rice flour, sorghum flour, or millet flour. Ingredients are listed with the highest amount of each in order, so you want to see these ingredients listed first.
- Find a flour that does NOT contain garbanzo beans.Garbanzo beans add density and awell, bean flavor. It tastes gluten free in the bad kind of way to many people.

What Is Psyllium Husk And What Is Its Role In Gluten Free Bread
This is probably the only unfamiliar ingredient in the list above but one that is absolutely crucial if you want to bake proper gluten free bread.
And before you ask: there is no substitute for psyllium husk.
Psyllium husk is available in two forms: as the rough husk or as a fine powder. This recipe uses the rough husk, which has the following appearance:
When its mixed with water, psyllium husk forms a gel and this is what acts as the gluten substitute, both in the dough and in the baked loaf.
Before baking, the psyllium gel helps to create a dough that can be kneaded and shaped . It also gives the dough enough elasticity so that it can trap the gas produced through the yeast action and expand during the bulk fermentation and the final proof.
In the final baked loaf, psyllium is responsible for the characteristic elasticity and flexibility of the bread, as well as its amazing chewy texture with an open crumb.

Does Bread Have Dairy
While not all bread contains dairy ingredients, many breads you buy at the store do. If you make homemade bread, you can easily keep dairy out of your recipes.
In store-bought breads, dairy can show up in the form of whey powder, butter, and skim milk powder.
If you avoid dairy, but not gluten, or are looking to avoid both like I do, be sure to review ingredients lists before purchasing. Look for those hidden names of dairy to help you make an informed decision on what brands and products to buy.
One of my little secrets is that I carry around a copy of my GFDF Take Along Cards so that I always have a point of reference when I can sneak a peek at the ingredient list of a food.

Tips For Measuring Gluten
The best way to measure gluten-free flour is the spoon & level method. Using a spoon, scoop the flour into the measuring cup. After youve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup.
Friends, please do not scoop the flour out of the bag with your measuring cup. If you do you may get more flour than the recipe calls for.
Also, measure flour using nested measuring cups. Do not measure dry ingredients in a liquid measuring cup.
