During my first year of teaching, we had a Christmas potluck at work and someone brought a delicious rum cake.

Meredith, who started teaching with me that same year, raved about it and asked the baker for the recipe. Its a secret recipe from my aunt, so I cant share it, she said.

Everyone was baffled that she wouldnt share the recipe. That Christmas break, I decided to try my hand at making a Bacardi rum cake from scratch.

I experimented with about 3 different recipes for rum cake. Then my mom said she remembered Bacardi publishing a rum cake recipe in the 70s.

A few years later, The Cake Mix Doctor was published with a similar recipe. Ive used that recipe here.

After break, I returned to school with a copy of the recipe and all the ingredients to make the cake. I gave them to Meredith, who later brought the rum cake to the next years potluck and shared the recipe.

How To Make Original Bacardi Rum Cake

  • 1Preheat oven to 325 degrees. Prepare one 9 or 10 in. fluted or bundt pan generously grease pan with some shortening and lightly dust with flour.
  • 2Sprinkle nuts on the bottom of prepared pan.
  • 3In a large bowl, combine cake mix, vegetable oil, and rum beat with electric mixer until thoroughly mixed. Scrape sides of bowl with rubber spatula to ensure even mixing.
  • 4Spoon the batter over nuts and smooth with back of spoon.
  • 5Bake 1 hr. or until toothpick inserted into center comes out clean. Cool 10 min.
  • 6Remove cake from pan and place on wire rack to cool completely.
  • 8In a heavy saucepan over low heat, melt butter. Stir in water and sugar Bring to a boil and boil for 5 min., stirring constantly so mixture does not burn. Stir in rum.Remove from heat.
  • 9Poke several holes in top of cake with a wooden skewer. Spoon warm rum glaze mix until absorbed. Continue to spoon mixture until most is absorbed.

Somehow rum cake sounds too forward, a little pirate-y maybe. For whatever reason, this particular cake with rum is called Bacardi Rum Cake! The recipe comes from my mother-in-law who first made it for me before I had any children and I then thought about it for nine long months during each pregnancy. True story.

I love how this cake is like a sponge to the rum glaze yet it doesnt get soggy. I dont love all cake. Im picky about texture and prefer a dense, moist cake . Same reason why I love tres leche cake but thats a post for another day.

How To Make Bacardi Rum Cake

  • Begin by making the rum-soaked cake by sprinkling the chopped pecans into the bottom of a tube or bundt pan. Also preheat the oven to 325 degrees.
  • Then place the remaining ingredients into a large mixing bowl and cream them together until they are well combined.
  • Next, pour the cake batter into the pan and place it in a preheated 325-degree oven to bake for 1 hour.
  • Youll know the cake is done when the cake begins to pull away from the sides of the pan.
  • Then make up the glaze by boiling everything except the rum in a saucepan and let it boil for 5 minutes while stirring it.
  • Once that is done, add in the rum and bring the liquid back to a boil for another couple of minutes.
  • Then just spoon or pour the glaze over top of the warm cake and enjoy.

    The glaze for Bacardi Rum Cake is made by boiling together butter, water, sugar and then adding RUM. Pour it all over the baked cake fresh from the oven, then let it set in the fridge for an hour or two to fully soak in Invert and admire!

    Tips To Make The Best Bacardi Rum Cake

    Here are a few tips so you can make the best rum cake! YUM!

    This cake is made in a bundt pan. I have an affinity for bundt pans.

    No matter how plain or fancy your bundt pan is make sure it is very well greased. Get into every nook and cranny with butter or a baking spray. For this cake, I used a baking spray infused with flour. If I did not use baking spray I would grease the pan with butter and dust it with flour.

    I also use extra-large eggs when I bake. I forget what professional cook taught me this baking trick but using an extra-large egg gives cakes a bit more loft.

    Now lets chat about the batter. No need to use a mixer. Just whisk all the ingredients together until just incorporated. Its today if there are some white little lumps in the batter! It will be fine! The important thing to remember is not to overmix the batter.

    When you take the cake out of the oven let it sit on a wire rack for about 15 minutes and then turn it out onto a large plate or cake pedestal.

    Prick the cake with a fork all over the top and down the sides just a little. I find the nuts often create a hard shell on the top of the cake making it hard to prick the cake and pour the rum sauce over it so it sinks in. So I sort of lift up the nuts with a fork so they are not so stuck onto the cake. Then the glaze easily gets into the cake and the nuts look so much prettier.

    Use a fork and prick it all over the top making tiny channels for the glaze to seep into.

    This secret recipe is made from a box of yellow cake mix. The reason she probably didnt want to share the recipe is that it is so easy!

    Do you have to use a cake mix? Absolutely not. If youd like to try making it from scratch, heres a link to a homemade yellow cake mix recipe.

    Theres also a box of vanilla pudding and eggs. Yes, I know, this isnt a very healthy cake, but you can always substitute the vegetable oil for something healthier. I use avocado oil instead.

    The original recipe calls for pecans, but you can also use walnuts or a combination of both.

    I slightly changed this recipe by dividing the nuts and putting 1/2 in the batter and 1/2 in the pan.

    Usually, nuts tend to fall off the cake if all of them are on top. Plus, I like the look and taste of them when theyre mixed in with the cake.

    Finally, whats a Bacardi rum cake without the rum? I like to use dark rum for the cakes glaze, and youll need around a half cup. Plus some leftovers to drizzle on top of the finished cake!

    To Make Ahead: This homemade rum cake can be made and kept in the refrigerator for up to 5 days. You can reheat a slice in the microwave for 15 seconds, or enjoy cold.

    To Freeze: Bake the cake but do not make the glaze sauce. Allow cake to cool completely then wrap in plastic wrap then tinfoil and store in the freezer for up to 3 months. Thaw cake completely in refrigerator overnight. When ready to eat, make the sauce, poke holes in the cake and gently pour the glaze on top. Allow it to rest for at least 30 minutes before serving.

    How To Make Rum Cake

    Begin by combining the eggs, egg yolks, rum, vanilla extract, and almond extract.

    Whisk and set aside.

    Combine the flour, sugars, baking powder and salt in the bowl of a heavy-duty mixer fitted with the paddle attachment.

    Beat on low speed to combine.

    Add the butter.

    Beat for a few minutes until combined.

    Add one-third of the liquid ingredients and mix on low to combine.

    Increase the speed to medium and beat for two minutes more.

    Add another third of the liquid.
