Nothing says spring and summer like fresh peaches. This recipe was inspired by another popular treat at the Masters golf tournament the Peach Ice Cream Sandwich. While Ive never had the pleasure of eating the ice cream sandwich, Ive heard it is delicious. I wanted to make a copycat version at home, but I really didnt want to deal with making the individual sandwiches. So, I decided to make a Masters Peach Ice Cream Pie instead. Sugar cookie crust filled with a creamy and delicious homemade peach ice cream. Let me tell you, this is DELICIOUS! I wanted to eat the entire pie! It is so light and packed full of peach flavor.

Below is the recipe for Ice Cream. See my favorite Sugar Cookies here. Hard freeze ice cream at least 1 hour before making sandwiches. You can put them together and enjoy them immediately or wrap individually in plastic wrap and take out one by one to enjoy.

If youre just making Peach Ice Cream and dont plan to put it in the sandwiches, consider adding chopped pecans.

How To Make Ice Cream Without A Machine

This Peach Ice Cream Pie is super easy to make. The best part of the whole recipe is that you dont need an ice cream machine to make the ice cream filling! YAY!!! You also dont need to cook the ice cream base and there are no eggs in the filling. I told you this was super easy!

Start by making the crust. Crush the cookies and mix with some melted butter. Press the crumbs into a springform pan and set aside. Next, make the ice cream filling. Puree some peach slices in the food processor. Combine whipped cream, sweetened condensed milk, and the peach puree. Stir in some chopped peaches and pour the mixture into the springform pan. Cover the pan with some foil and pop it in the freezer.

Peach Pie Ice Cream Sandwiches

Forget peach pie à la mode and make it as an ice cream sandwich instead!

  • 2 3/4 cups all-purpose flour
  • 1 tablespoon brown sugar
  • 1 1/2 teaspoons kosher salt
  • 18 tablespoons unsalted butter, cubed and chilled
  • 6 tablespoons ice water

Peach Bourbon Caramel Swirl Ice Cream

  • 1 container old-fashioned vanilla ice cream, divided
  • 1 ripe but still firm peach, pitted and diced, divided
  • 1 batch bourbon caramel sauce, recipe follows

Peach Compote

  • 6 ripe peaches, peeled, pitted and roughly chopped
  • 1/4 cup sugar

Peach Pie Ice Cream Sandwiches ~ Recipe

When you are ready to serve this Peach Ice Cream Pie take it out of the freezer and let it sit on the counter for about 20 to 30 minutes so it will be easier to slice. Top each slice with a dollop of whipped cream and a little fresh peach slice.

This pie is SOOOO good. It is great for all your upcoming get-togethers. I love to make this for cookouts, BBQs, potlucks, dinner parties and Easter! I love that you can make it ahead of time and pull it out of the freezer when you are ready to eat.

Ingredients

1 pint of Alden’s vanilla ice cream

1 pint of Alden’s chocolate chunk ice cream

Cinnamon sugar

Plastic Wrap for sealing the ice cream sandwiches

Instructions

  • Preheat oven to 375 degress F
  • Line a 9X13 in cookie sheet with parchment paper, set aside
  • Make cinnamon sugar by mixing the two ingredients in a small bowl until well combined, set aside
  • Make pie dough according to recipe directions
  • After rolling out the pie dough make 12 even rounds using a 3 inch cookie cutter
  • Place the cookie shapes on the parchment lined cookie sheet
  • Sprinkle each cookie with cinnamon sugar mixture
  • Bake pies for 15 minutes until golden brown
  • Place pies rounds on a cooling rack until they are completely cooled
  • Get ice cream out of the freezer and let it sit out for about 10 minutes until slightly soft
  • Assembling the Ice Cream Sandwiches:

  • Take one pie round and gently press ice cream about 1 inch high then cover with the other pie round. DO NOT PRESS HARD as the pie shells are flaky and tender
  • Gently wrap each individual PiesCream Sandwich in plastic wrap and freeze at least 2 hours before serving
  • As soon as you finish assembling each one place in the freezer so they aren’t melting as you prepare the others

    Its that time again! Our next installment of our local project, featuring wonderful local vendors and the products they offer! This time were featuring Perrydell Farm & Dairy not only have they been an icon in the York area for 50+ years but they are also huge local supporters too! Walking into their store, its filled with everything from baked goods, to coffee from local vendors, and they also source much of their produce for their ice cream from local orchards! And thats exactly what theyve done in the peach ice cream were featuring today! Most of their peaches come from J-Mar Farms or all within close proximity of Perrydell!

    Heres how they make the peach ice cream, first they chop and sugar all the peaches that come in from the orchard. After soaking, they drain all the peach juice off to mix into the ice cream mix . After some pureed peaches are added to the mix, its churned until its frozen and then the chopped peaches are added as the frozen ice cream comes out.

    Heres the milk, fresh from the cows, coming in to get packaged.
