Maine Lobster Pot Pie – The Best Thing I Ever Ate: Reinvented Classics

We want a place that feels like home.

This continues to be the driving philosophy that owners Brian and Shanna OHea strive to maintain at Academe on a daily basis. Although it is common for a restaurant to want their guests to feel at home, the OHeas take the concept a step further by thoughtfully preparing foods inspired by their travels and the kind of cuisine they enjoy on their day off.

It is a well-balanced effort that is illustrated beautifully by a dish of citrus-crab ravioli. Brian makes the pasta dough with lemon segments and zest, while Shanna puts together the filling of crab and mascarpone, which is livened up with a hint of lemon juice. The ravioli is tossed with shrimp, mussels, and an aromatic and indulgent sauce of heavy cream, Cointreau, and a touch of Madras curry and sage. The dish was inspired by our first trip to Greece, says Brian. We were completely blown away by the manner in which citrus was consistently utilized to elevate the dishes without overpowering them. He adds that by the end of this particular excursion they were so stimulated they were literally scribbling down ideas for recipes before even getting up from the table. Traveling consistently re-energizes Brian and Shanna, in regards to their business. Every time we experience something new, says Brian.

Here Are 10 Steps For You To Follow When You Make Lobster Pot Pie:

  • 1. Start by preheating your oven to 425, and greasing 4 two-inch ramekins or spraying them with nonstick cooking spray.
  • 2. Put a cup of chopped Yukon gold potatoes, a half-cup of sliced carrots and 3 cups of low-sodium seafood stock into a saucepan, then bring it to a boil over high heat. Cook the veggies and stock for 8 to 10 minutes, then strain the stock into one bowl and put the veggies in another.
  • 3. Put a tablespoon of olive oil and 3 tablespoons of butter in a large stock pot, and melt to combine over high heat.
  • 4. Add 4 lobster tails and cook for two to three minutes, until slightly red and opaque. Remove and set aside.
  • 5. Put a diced sweet onion and a teaspoon of chopped fresh thyme into the stock pot, stirring well to coat. Add salt and pepper to taste, then cook for about five minutes, until soft.
  • 6. Create a roux by adding 3 tablespoons of all-purpose flour, whisking until its gold in color and fragrant, about 4 minutes. Then, add 2 tablespoons of tomato paste and cook for an additional minute.
  • 7. Pour in ¾ cup dry sherry, cooking until the sherry is reduced by half. Then, slowly stir in the stock you set aside, followed by the veggies, the kernels from two ears of fresh corn and a cup of cream. Once the mixture is simmering and slightly thickened, add the lobster and salt and pepper to taste.
  • 8. Spoon the filling into ramekins, and top with squares of puff pastry cut to fit and brushed with egg beaten with water.
  • 9. Bake for 25 to 30 minutes.

    Serves 6

    • 3 cups all purpose flour
    • 2 sticks butter, cold
    • 1/4 cup plus 3 tbsp ice cold water
    • 4 tbsp unsalted butter
    • 4 tbsp all purpose flour
    • 3 cups chicken or veggie stock
    • 1 1/2 cups diced potato
    • 2 cups frozen mixed veggies
    • 1/2 tsp garlic powder
    • 2 tbsp fresh chopped rosemary
    • 1/2 tsp salt
    • 3 cups roughly chopped cooked Maine Lobster meat
    • 1 egg, beaten

    Preheat the oven to 400 degree F. Lightly butter an 8 qt size baking dish

    Place the flour in a large bowl and grate the butter into it

    Add the salt and gently mix together with your fingers

    Add the cold water and mix until the dough forms and comes together to form a ball

    Once the dough is in a ball, cover with plastic wrap and chill for 30 minutes in the fridge

    In a large pan melt the butter and whisk in the flour until the mixture starts to turn golden in color.

    Gradually add the stock whisking after each addition and removing any lumps

    Once all of the stock has been added and the sauce has thickened, add the potatoes and veggies and simmer for 3-4 minutes.

    Add the garlic powder, rosemary, salt, pepper and heavy cream, stir well

    Gently fold in the cooked lobster to the pot pie filling and transfer to your prepared baking dish

    Roll the pastry out so it is big enough to cover the baking dish with some hanging over the sides of the dish

    Tuck the pastry into the sides of the pie dish making sure to allow plenty of pastry to prevent it shrinking as it cooks

    I ordered a salad for 8.00 and added chicken to it for another $5. The portion was tiny. The tiny bed of lettuce had a sprinkling of cranberries, cheese, and pistachios on it. The small portion of chicken was bland and boring. The dressing was had a heavy overtone of vinegar. The decor was uninspiring. I was still hungry after my lunch.

    The salad I ordered was uninspired and the leaves weren’t so fresh. The lobster pot pie was supposed to be incredible, but had barely any meat in it and was all cream and liquidy. The two pieces of potato in it were barely cooked through. There were barely any vegetables in it. The short ribs were overpriced at $27 dollars and the “ribs” were one rib which was all fat with two bones falling to the the side of it — barely anything to eat. The service was slow and I had to ask the server to wipe the sticky table down, then I had to ask her to dry it off as she left it sopping wet. The food took forever to come. By the time the meal finally arrived we couldn’t wait to get out of there.
