In August of 2004, just over 30 years after its founding, Schlotzsky’s filed for Chapter 11 bankruptcy. This means that Schlotzsky’s was allowed to remain in operation while it reorganized its affairs. Locations were closed across the country, the company’s stocks were removed from Nasdaq, and the business was auctioned off three months after its bankruptcy filing.

Fast Casual reported in 2013 that Schlotzky’s had rebounded. Then-president Kelly Roddy decided to focus on what the restaurant did well, and what set it apart from other similar chains. For example, Schlotzsky’s signature sandwiches are round rather than long like the sandwiches at Subway and Jimmy John’s. The chain also recommitted to its promise of freshness by improving its salad menu.

The Austin Business Journal described Schlotzsky’s push to freshen up its brand by returning to its Austin, Texas roots in an attempt to draw a cooler, younger customer base. Today, Schlotzsky’s is looking for enterprising franchisees to help reach more regions across the United States.

Schlotzsky’s Is All About The Bread

Schlotzskys has been around for almost 50 years but is just getting started. The restaurant has recently revamped itself with a new look but the same great tasting food. The first Schlotzsky’s opened up in Austin, Texas in 1971, and now there are locations in more than 25 states, including Arizona.

Basically the whole Schlotzskys concept starts around the bread. We bake our bread fresh every single morning, says Bobby Nelson, general manager at the Schlotzsky’s in Scottsdale near 90th Street and Shea Boulevard. Thats basically the way they used to do it in 1971, and they had one sandwich that was called The Original, and their baker would come in the morning, and he would bake off whatever numbers they thought they were going to do for the day, and when they ran out, they closed their doors.

Thats definitely not the case now. In fact, the main baker at that location, a man named Andy, says he makes about 250 pieces of sourdough a day at least, and they stay open all day.

Thats whats different about us. When were talking about what sets us apart from others is this sourdough bread, Andy says.

They make different types of sourdough including regular, rye, wheat and jalapeño cheddar plus bread for pizza. Chocolate chip cookies, sugar cookies and brownies also go in the oven.

Andy knows many people can now relate to that feeling of satisfaction after bread baking at home has become extremely popular during the COVID-19 pandemic.

Nsync’s Joey Fatone Helped Launch A New Sandwich

February of 2022 saw something new hit Schlotzsky’s sandwich menu: calzones. And who better to rep the hot new item than someone whose name rhymes with calzone? Joey Fatone, formerly of NSYNC, even changed his name on social media to Joey Calzone as part of the promotion.

Fatone is a big fan of Italian food, so he was enthusiastic about this new sandwich venture. The calzone originated in Naples, Italy in the 1700s. The name literally translates to English from Italian as “pant leg,” a reference to the calzone’s portability.

While the original calzone is a folded pizza with a sealed edge, Schlotzsky’s calzones are more like flatbread sandwiches. These folded-over pizza sandwiches come in three varieties: Italian, BBQ chicken, and French dip. The Italian calzone comes with marinara dipping sauce while the French dip, naturally, is accompanied by the traditional au jus. Amazingly, there is no extra BBQ sauce for dipping the BBQ calzone into, which seems like a missed opportunity. Each calzone is baked from scratch.

Schlotzsky’s Holds A Guinness World Record

Guinness World Records is a world record-certifying organization that started in the 1950s with the Managing Director of the Guinness Brewery, Sir Hugh Beaver. While participating in a hunting party, he and the other hunters wondered which was the “fastest game bird in Europe.” Unfortunately, at the time, there was no reference book with this information.

Nowadays, you can find all manner of fastest, strongest, longest, biggest, and more in the annually updated Guinness World Records books. And in 2017, Schlotzsky’s was entered into these hallowed annals for the Most Contributions to a Painting by Numbers. The subject of the painting, a mural actually, was, of course, The Original sandwich. Austin street artist Sloke One designed the mural. It was painted on the brick wall of the South Lamar Boulevard Schlotzsky’s location with contributions by 2,643 people using 22 gallons of paint.

Then-Schlotzsky’s president Kelly Roddy said of the occasion, “Our Austin heritage is what the Schlotzsky’s brand was built on, and we couldn’t be more proud to work alongside the local community to bring home a Guinness World Records title.”

One of the ways the restaurants raised money was through what Schlotzsky’s called “Give $1, Get $1.” For every dollar that a customer donated to JDRF, they received one dollar off their next order at Schlotzsky’s. On the day of the run, each location also donated 10% of sales that day. In its first five years of raising money for JDRF, Schlotzsky’s donated nearly $1 million. In 2019, the beneficiary of the Bun Run was Sunshine Camps, an organization that runs summer camps for children from low-income families in Austin.

While previous races have taken place in Austin, Texas, the 2022 race was held in Ruidoso, New Mexico.

All of our potato chips are gluten-free, except for BBQ chips. Yes, it includes cracked pepper, Jalape*o, regular, salt, vinegar, sour cream, and onion, among other things.

Schlotzskys is famous for their Loaded Potato Soup, which contains a delectable 385 calories. Except for potato chips, they only sell gluten-free products. It is delicious. We do not recommend this brand because we were not made aware of the gluten content of the mustard. Subways bread, unlike their signature bread, is not baked in the restaurant. Schlotzskys has a smoked turkey sandwich that is 353 calories in size. Original turkey sandwiches contain 831 calories, 35 grams fat, 14 grams saturated fat, and 2,529 milligrams of sodium. Gluten-free bread will not be available in half and half order. Great for making a GF bun. The sandwich I ate was medium-sized and had a gluten-free bun, which tasted just like a regular sandwich. One allergen awareness website reads, in terms of sandwich shops, they struggle to be transparent.

The very first review we looked at on a gluten-free dining site reads: had such high hopes for the GF pizza. It was tasty, but was most definitely cross contaminated. Very sad. Stomach is killing me now.

This probably isnt what gluten-free sandwich or pizza lovers want to hear.

Browsing through the hundreds of reviews and customer feedback across various retail locations indicates the training of the staff on GF protocol may be region specific. Some locations seem to fare much better than others.

Other reviews are a whopping 5 stars out of 5, mentioning how much care staff took to avoid cross-contamination by cleaning, sanitizing, wearing gloves, and keeping the prepared GF food separate from the wheat products.

One of these 5 star Tripadvisor reviews proclaims that the gluten-free crust is even better than the normal pizza crust.

Another food blogger writes: I asked the cashier to speak to someone about their procedure in place for gluten free.

The manager on shift told me that they wash their hands prior, wear gloves when handling, and specifically place tinfoil under bread or pizza when it goes into the oven to prevent any cross contamination from occurring.

Schlotzskys Protocol For Gluten Free Bun

Now you can get a sandwich on an Udis Gluten Free bun there. The company explained to me they put together a stringent 10-step protocol for storing, prepping and preparing any sandwich on our menu to ensure they are served to our guests as gluten free as possible.

Heres the protocol according to Schlotzskys:

  • Change into a fresh pair of food safe gloves
  • Open individually wrapped Udis bun
  • Place GF bun on foil to avoid contact with Meat/Cheese make table build sandwich as ordered
  • Send sandwich through conveyor oven on same foil to avoid food contact
  • If a different person is working the Finish make table, they must also change gloves.
  • Place two large sandwich papers on the Finish make table to avoid food contact
  • Remove GF bun from oven and place on double paper. One is used to wrap the sandwich and the other to protect the GF bun wrap from the finish make table
  • Finish the sandwich build as ordered using covered vegetables stored under the Finish Make table away from regular use
  • Wrap sandwich in paper and proceed with Dine-In or Carry-Out/Drive-Thru order procedures to avoid contamination with knives used for other sandwiches DO NOT cut the GF sandwich!
  • If the guest orders a pickle for Carry-Out/Drive-Thru service, it must be wrapped separately.
