Unroll The Cooled Cake

Once the cake is completely cooled unroll the cake, but leave it on the towel.

You will use the towel later to assist you with rolling it back up.

The end may stay a bit curled and it is OK. I tell you what to do with that part in a minute.

There are a few cracks in the uncurled piece. No worries, it is going to be right in the middle of the cake.

The cake will crack some after it has cooled and you unroll it.

The best you can do is minimize the cracking.

Cover the cracks with some sort of topping and it will be delicious no matter what.

How To Make An Ice Cream Roll Cake

The first step is to make the cake, which is a vanilla sponge. While not difficult to make, following the steps are important as the cake can be fragile and you will be handling it quite a bit when you roll it and dont want it to crack too much .

Preheat the oven to 350 degrees. Prepare the baking sheet. Dab it with butter in several places, then line the sheet with parchment paper. Set a pot with a small amount of water on the stove to bring to a boil.

Remove the bowl from the heat and beat on a medium to high speed for 5-6 minutes, or until the mixture has tripled in volume and ribbons form.

While you sift the flour in with one hand, use a wide spatula to fold the flour into the batter with the other hand .

Fold in the melted butter.

Pour the batter into the prepared pan, gently spreading it out to the edges of the pan with the spatula.

Bake for 11-13 minutes, until it is just turning golden at the edges of the pan.

Remove the cake from the oven and let it sit for 5 minutes.

Place another piece of parchment paper on top of the cake and turn it upside down on top of the new parchment paper. Then, carefully remove the paper that covered the bottom of the cake and place it loosely back on top. Let the cake cool until barely warm .

Once the bake is barely warm, gently, but tightly roll the cake lengthwise . Fold the ends of the paper in to enclose the cake and refrigerate until you are ready to assemble the cake.

While you may be able to store your ice cream cake in the fridge for about 30 minutes to an hour before serving, so that it can soften from the frozen state, you wont want to keep it in the fridge forever. this is because the ice cream will eventually begin to melt as it isnt as cold in a fridge as it is in a freezer.

Beat eggs 5 minutes. Add water and cake mix gradually. Beat on high 2 minutes. Grease 2 pans, line with wax paper and grease again. Divide mix in 2 pans. Bake at 350 degrees for 10-20 minutes. Do not overbake. Immediately invert on towel covered with powdered sugar. Roll up and let cool completely. Unroll carefully. Spread each with 1 quart ice cream, roll back up. Wrap in foil and freeze. Slice and serve with toppings. Great way to feed a crowd dessert. Prepare ahead of time and make 2 cake rolls that serve 10 each.

Good Combos: Chocolate Cake, Mint Chip Ice Cream and Hot Fudge. White Cake, Strawberry Ice Cream and Fresh Strawberries.

Rolling The Filled Cake

Start rolling the cake up, starting with the end that didnt want to lay flat. Roll it as tight as you can. This is when the ice cream will work its way to edges.

Wrap the cake roll in plastic wrap and place in the freezer until the ice cream roll is solid.

It takes at least 3 hours for ice cream to become solid again.

If your freezer is full or set at a lower temperature, it may take overnight. This really isnt a dessert you can make and enjoy immediately.

If youd never made a cake roll before, I can see how itmight seem a little intimidating. However, if you follow the instructions to a tee, you shouldnt have anyproblems. Heres a few tips:

  • Make sure the cake is done, but also dontovercook it. The more a cake bakes afterits done, the drier the cake will become . If its overdone and dry,itll be more difficult to roll up.
  • Line the pan before pouring the batter into it. You can either use parchment paper or asilicon baking mat for this. This willhelp you get the cake out of the pan in one piece.
  • When the cake comes out of the oven, dontforget about it! First off, set the cakeon a wire cooling rack and set a timer for 5 minutes. During the 5 minutes, youve got a couplethings to do. First, run a knife aroundthe edge of the pan, so when you flip it over the edges dont stick. And second, get your clean towel and powderedsugar ready for the rolling . When the 5 minutes is up, roll the cake up! .

  • Once the cake is out of the oven, place a thin kitchen towel on a flat work surface.
  • Sift 2/3-3/4 cup of powdered sugar on to the towel. You dont need to cover the ENTIRE towel. But it needs to cover enough space to fit the cake. Dont be shy with the powdered sugar. If you think 3/4 cup isnt enough, add more. The powdered sugar prevents the cake from sticking to the towel. Be generous.
  • Turn the cake onto the powdered sugar lined towel. GENTLY roll the cake and towel together. Rolling the cake while warm creates muscle memory if you will, for the cake.
  • Once the cake has cooled, unroll the cake and add the softened ice cream. My homemade creamy vanilla ice cream tastes amazing in this cake roll! I pull my ice cream out of the freezer 15 minutes or so before I plan on spreading it over the cake. You want the ice cream to be workable.
  • Gently spread the ice cream over the cake until you have achieved an even layer covering the cake. Just remember, if you add a lot of ice cream, you wont get much of a swirl effect. Ive made this cake multiple times, once with A LOT of ice cream and then with 16 oz of ice cream . Both tasted great! So do whatever floats your boat.
  • Roll the cake and ice cream up. Cover with aluminum foil and immediately place in the freezer for 4-6 hours or until firm.
  • Serve with hot fudge, powdered sugar, or crushed candy canes.
  • Or if its for my birthday dessert Ill add cookies n cream ice cream. This dessert is very customizable, so have fun with it!!

    Cherry pie filling and fresh mint are optional, but make a pretty garnish for the cake. Fresh berries would also be really pretty!

    Roll the cake while it is hot! I know that sounds crazy, but using a towel helps absorb some excess moisture. At the same time, the cake stays moist enough to roll. When you unroll it, then it will still hold the curve for easy re-rolling with the ice cream, jelly, or whatever filling you choose.

    Make sure your towel is clean and big enough for the cake. I have always used a flour sack towel or tea towel as I have always called them.

    Also, be careful not to overbake your cake! A nice moist cake makes all the difference too. Bake it too long and you might just as well call it cookies instead. Because a hard cake will not roll up!

    Also, before spreading the ice cream, make sure the ice cream is nice and soft. To firm and cold risks breaking the cake.

    Youll need to work quickly, as the ice cream gets melty in no time. But dont worry, the ice cream cake roll goes back into the freezer to set up.

    The goal of separating an egg is to separate the egg white from the yolk. There are a number of different ways to do this, but the method that I have always found the most manageable is to do the following:

  • Pull out two bowls
  • Crack the egg over the bowl that you would like the egg white to go into
  • Using the two halves of the egg shell, gently move the yolk from one half of the shell to the other, allowing the egg white to fall down into the bowl

    Variations Of The Ice Cream

    Making a Cake Roll

    The biggest variation on the ice cream we would make is using a different extract. Because we are using such a neutrally-flavored no-churn ice cream recipe, you can effortlessly substitute the vanilla with any flavor that youd like.

    You can even use a bit of reduced syrup or juice to add flavor. Just take into consideration that you dont want to change the consistency of the ice cream base too much .

    You can also buy pre-made ice cream to save you some time. We just love the flavor of homemade ones.

    What Size Is A Jelly Roll Pan

    A typical jelly roll pan is 10 by 15. Jelly roll pans resemble standard baking sheet pans, but sheet pans generally run a few inches wider and longer. Still, in a pinch, you could use a standard-sized sheet pan, but the cake will be much thinner, and therefore you will need to adjust the baking time. Both sheet pans and jelly roll pans possess depths ranging from a 1/2 inch to about 2 inches.

    Assemble The Cake Roll:

    Unroll the sponge and brush the entire surface with liqueur of your choice. I used coffee liqueur but other options include rum, Amaretto or Frangelico .

    Remove the carton of Neapolitan flavored ice cream from the freezer and slice with a sharp knife into roughly half inch slices.Use a spatula to transfer slices of ice cream onto the sponge. Leave a 1-inch border at one of the short ends as the ice cream tends to ooze out when you rolling. I used about 3/4 of the ice cream. package. Return unused ice cream to the freezer.

    Dont worry if the slices are not perfectly arranged, it will turn out fine when you roll the cake.

    Youll notice that I did not obtain a swirl of all 3 flavors in each slice of cake as I had hoped for. Oops! Although this is not completely necessary it does make for a pretty slice of cake so if this is what you wish for, place your slices of ice cream in the opposite direction that I placed mine in.

    Carefully lift one short edge of the parchment paper and slowly, as tightly as possible, roll the cake using the parchment paper to guide you along. If some of the ice cream oozes out at the opposite end simply remove the excess with your spatula. Dust the top with more powdered sugar to avoid sticking to the parchment paper.

    Place the roll seem side down on a sheet of clean parchment paper. Wrap it and cover tightly with plastic wrap. Place in the freezer to set before serving, at least 2 hours.

    Cake Roll With A Cake Mix

    To keep this cake roll 100% easy I used a box mix for this recipe. If you have a chocolate jelly roll cake recipe you prefer to use by all means use it. But in the interest of saving time and making the perfect cake, I used a Betty Crocker Cake Mix.

    Now be aware that a cake mix will make TWO cake rolls so youll have to divide the cake mix Youll have enough cake mix left to make another cake roll OR some cupcakes.

    To split the cake mix simply weigh and then remove half. If you dont have a scale use cups and divide it as best you can.

    If you want to use up that extra cake mix by making cupcakes, follow the package directions and cut the required amount of ingredients in HALF.

    How to Roll a Cake:

    • dust a clean dish towel with powdered sugar
    • when the cake comes out of the oven instantly invert it on the dish towel
    • peel off the paper pan lining
    • begin rolling the towel on the short side, roll quickly and firmly but not too tight
    • once the cake is roll inside the towel, place it seam side down on a baking tray to cool
    • once its cool carefully unroll the cake
    • fill it to within 1/2 on each long side and one inch on the short outer seam
    • roll up carefully around the filling, be sure to clean off any extra filling that squeezes out
    • cover in plastic wrap, store in the freezer for ease of cutting, whether your filling is ice cream or just cream or jelly
