These delicate, sweet crustaceans are only available from that date through May, the reason that lines in high season form to get into the restaurant known and named for them, Joes Stone Crab. But for those who want their stone crabs delivered, either in the Miami area or elsewhere in the U.S. and guaranteed fresh, never frozen, a new company, simply and descriptively named Fresh Stone Crabs, is springing into action.

    This company is new but the concept is actually a reincarnation of owner Shelly Abramowitzs previous operation shipping stone crabs in 1989. We set it up in my garage, got a blurb in New York Magazine and within a year, it was a million bucks, shipping all over the country, says Abramowitz who in his previous life was a New York restauranteur with the social scene restaurants Canastels and Café Society earlier in that decade. Then someone talked me into doing a 60 seat restaurant on Lincoln Road. Gloria and Emilio Estefan were there, I got a fabulous crowd, mixed in some steaks. But you get only a certain amount of stone crabs so you have to decide do I serve them or ship them? My shipping business dwindled I just shipped to my friends.

    Joe’s Stone Crab Key Lime Bars

    1 cup plus 2 1/2 tablespoons finely ground graham cracker crumbs
    1/3 cup sugar
    5 tablespoons unsalted butter, melted
    3 large egg yolks
    1 1/2 teaspoons finely grated lime zest
    2/3 cup fresh Key lime juice
    1 can sweetened condensed milk
    1/4 cup heavy cream

    Steps:

    • Directions 1. Make crust: Preheat oven to 350 degrees. Stir together graham cracker crumbs, sugar, and butter in a small bowl. Press evenly onto bottom of an 8-inch square glass baking dish. Bake until dry and golden brown, about 10 minutes. Let cool completely on a wire rack. 2. Make filling: Put egg yolks and lime zest in the bowl of an electric mixer fitted with the whisk attachment. Mix on high speed until very thick, about 5 minutes. Reduce speed to medium. Add condensed milk in a slow, steady stream, mixing constantly. Raise speed to high mix until thick, about 3 minutes. Reduce speed to low. Add lime juice mix until just combined. 3. Spread filling evenly over crust using a spatula. Bake, rotating dish halfway through, until filling is just set, about 10 minutes. Let cool completely on a wire rack. Refrigerate at least 4 hours . 4. Cut into 2-by-2-inch bars. Put cream in the clean bowl of an electric mixer fitted with the clean whisk attachment. Mix on medium-high speed until stiff peaks form. Garnish bars with whipped cream and a slice of lime.

    After eating this pie numerous times at Joe’s Stone Crab restaurant in Las Vegas, I finally asked the waiter if they shared their recipe and he gladly gave it to me. He said the secret of their recipe is freezing it! Two 14-ounce cans sweetened condensed milk. 5 egg yolks. 1 cup fresh key lime juice. Zest of 1/2 key lime

    Bake at 350°F for 10 minute cool. Stir together milk and lime juice. When thickened, pour onto crust. Beat egg whites with cream of tartar until foamy, add sugar slowly and continue beating until meringue forms glossy and white stiff peaks. Spread on pie and peak up with ends of fork. Bake 25 minutes at 325°F. Chill for 8 hours to set.

I was introduced to Joes by my mom-mom and Zadievery hard working scrap metal processors formerly from Russia and Poland, then Hazleton PA. They resided at 7345 South Ocean Drive Miami Beach, Florida. If you can afford to pay income taxes to this great country you can most definitely afford to go to Joes for an outstanding stone crab dinner and of course lobster cocktail and key lime pie for dessert.     Early records show the first written recipes of key lime pie date back to the 1930s-1940s, but it was likely being made in homes long before then. There is general consensus that the first key lime pies were made in Key West, Florida, where there is an abundance of key limes. Legend has it that Floridas first self-made millionaire, William Curry, had a cook known as Aunt Sally who created the pie in the late 1800s, while others think that this was already a delicacy first produced by an area fisherman.
