My Bread Came Out Gooey In The Middle Why

The bread should not be gooey at all. But if it happens, possible reasons are as follows:

  • Baking in a a convection oven instead of conventional oven. See the section above explaining why this makes a huge difference.
  • Inaccurate measurements. Even if you have been baking since forever, it is possible that you mis-measured. It is easy to get distracted for a split secondit happens to everybody! If you measured using cups, I urge using a scale next time around. You will love using the scale to measure once you start.
  • Oven temperature is off. I regularly check my oven temperature setting using an inexpensive oven thermometer. Check to make sure the oven is accurate before baking. If the oven is too hot, it can force a faster rise to the bread, leading to a bubble under the top of the loaf.
  • What Is The Texture & Taste Of The Bread

    First, texture: The bread is very much like a fine-textured whole grain bread. It is hearty, but soft with a pleasing crumb. The high protein and high fiber of a single slice means that is also very filling.

    Taste: The flavor of the bread is very much like a full flavor multigrain bread. It is excellent straight up, or toast it to enhance the already nutty flavor of the bread.

    The bread is wonderful for toast, sandwiches, and accompanying meals of all kinds. Both sweet and savory fillings are delicious in combination with the whole grain-like flavor of this bread. Here it is with my easy cashew cream cheese and some sliced strawberries .

    Why Vital Wheat Gluten

    For those unfamiliar with vital wheat gluten, this is a natural protein found in wheat and it is especially valuable in baking wholegrain breads because it helps them build structure– in simpler words, it helps them rise. I’ve explained the role of gluten in bread-baking and the gluten content of various kinds of flours in this old post on my Whole-wheat French Bread.

    But to do a quick recap, here’s the reason whole wheat bread doesn’t rise as well as a bread made with all-purpose flour or bread flour: gluten occurs in the grain’s endosperm and all-purpose and bread flours are made by milling the endosperm which automatically gives them a high gluten content. Bread flour, especially, has a very high gluten content, making it ideal for breads .

    Whole-wheat flour contains not just the endosperm but also the wheat germ and bran which are the outer coatings of the wheat kernel and are devoid of gluten. Since ounce for ounce whole-wheat flour has less milled endosperm in it than more refined flours do, it has a lower gluten content. Adding a bit of vital wheat gluten into the mix helps the bread rise higher and also improves the texture of the whole wheat bread, keeping it from becoming too dense.

    While it is entirely possible to make an all whole wheat flour bread without the vital wheat gluten, and I’ll share that recipe with you as well in the near future, this bread is way lighter and softer than any whole wheat bread recipe I’ve ever tried, and it remains my favorite.

    The chemical compositions of flours , and pea protein powder, such as protein content, fat content, ash content, moisture contentand dietary fiber content were investigated. Carbohydrates were calculated by subtraction of protein, fat, moisture, and dietary fiber. The calorific value was calculated according to Costantini et al. using Atwater coefficients.

    Can I Use Something Other Than Whole Psyllium Husks

    No, for this recipe it must be whole psyllium husks. Other gelling agents, such as flaxseed meal or chia seeds, will not work as direct substitutes .

    I have not tested the recipe with psyllium powder. It can work as a substitute for the whole husks in some recipes. If you try the bread with psyllium powder, you will need to use an equivalent weight , which is significantly less volume than the whole husks. Check the label of your brand of psyllium husk powder, or use a kitchen scale.

    Do I Need To Score The Bread

    I wouldn’t usually score a sandwich bread, but I did in this case because in the past, especially when I was using a whole cup of vital wheat gluten, the bread would sometimes form a skin on top when baking with a large air bubble underneath. Having baked with the smaller quantity of vital wheat gluten for a while I feel comfortable saying that you don’t have to score the bread if you don’t want to.

    The Ingredients & Substitutes

    Buckwheat, Almond & Chia Bread – Gluten free, Vegan & High Protein
    • Dried Lentils: I usually use green or brown lentils. A reader reported that the bread also turns out great with red lentils. Please soak the lentils for at least 2 hours or overnight.
    • Water: You can use filtered or tap water .
    • Oat flour: You can easily make your own by grinding rolled oats in a blender or electric coffee/spice grinder into a floury consistency for this high fiber bread.
    • Chickpea flour: Alternatively, rice flour works well. You may also use quinoa flour, buckwheat flour, or sorghum flour, though I havent tried.
    • Psyllium husk powder: This ingredient mimics gluten in gluten-free baked goods and plays a major role in helping the gluten-free protein bread rise.

    There are only a few steps to preparing this yeast-free bread, including:

    • First, add the lentils to a large bowl with plenty of water . Then soak for at least 2 hours . Then drain the water.
    • Preheat the oven to 400 °F/205 °C and line a large loaf pan with parchment paper.
    • Then, blend the lentils with 320 ml fresh water until puréed.

    It can help to use a tamper, if you have one, to ensure theyre evenly puréed. Otherwise, pause the machine and give it a mix as needed.

    • Then, transfer the puréed lentils to the same large bowl as before with all the remaining ingredients and mix well with a spatula.
    • Pour the healthy bread batter into the prepared pan, using a spatula to smooth the top if necessary.

    I also sprinkled two additional tablespoons of pumpkin seeds over the batter before baking.

    • Bake the bread on the center rack in the oven for 45 minutes. Then, allow it to cool completely on a cooling rack before slicing. Enjoy!

    What Makes This Gluten

    • High in Fiber: One serving of this bread has almost 5g of fiber. Thats more than double the amount in typical gluten-free breads!
    • High in Protein: Each serving of bread has 5g of protein. This is great if youre trying to remain plant-based but still want to make sure youre getting enough protein.
    • Low in Sugar: Less than 2g sugar in each slice of bread means its totally guilt-free!

    Alternatives For Healthy Cornbread Recipe

    I really recommend making this high protein cornbread with the ingredients and products in the recipe for a perfect soft and sweet and skinny cornbread. If you dont have some of the ingredients on hand, heres some alternatives you can try.

    Just a note that I havent tried all of these options out, so I cant say theyre all going to work.

    • Replace the gluten free all purpose flour with regular AP flour. Whole wheat pastry flour or a half-and-half of whole wheat and all purpose for a healthy cornbread with whole wheat flour.
    • Use extra flour in place of the unflavored protein powder. You might also want to reduce the amount of milk in this case by about 2 tablespoons.
    • Switch out the almond milk for any other non-dairy milk or regular milk.
    • Use coconut yogurt and Vegan butter for a dairy free cornbread.
    • Switch out the maple syrup for honey you wont have the option for a sugar free recipe in this case.

    How To Make Protein Powder Cornbread With Yogurt

    This skinny bodybuilding cornbread recipe is extremely easy to make and comes together in about 40 minutes. You do need to wait for it to cool after though

  • Preheat your oven to 350°F and grease an 8 x 8 baking pan
  • Mix the dry ingredients for the cornbread in a bowl gluten free flour, unflavored protein powder, vanilla protein powder, baking powder and salt
  • Whisk the wet ingredients in a large bowl: Milk, eggs, yogurt and maple syrup

    So taking that knowledge and switching to gluten-free flour, where there is none of this protein is available, adding more protein to your flour blend makes sense. I would even venture to say the more proteins you can add to your bread dough, often times the better. Or at least you’ll have a better structure to your yeast bread.

    Bread is one of the greatest treats this world has to offer no thats not an opinion, its a fact.

    Bread can be added to any meal and goes with pretty much every food you can think of. Theres an issue though: breads are generally made of cheap non-nutritive ingredients and Enriched Flour. What is Enriched Flour you ask?

    Enriched Flour: Flour that is artificially laced with nearly all the vitamins and minerals that were lost while prepping the flour. Enriched Flour attempts to, but does not equal whole grain flour.

    Another issue you face is that grain flour bread contains a protein that some individuals simply cannot digest, therefore causing a multitude of issues within the body: Gluten.

    To make bread nutritious, you merely have to use a flour that is not comprised of enriched wheat flour…if you dont suffer from celiac disease, you could use a whole grain flour and you are a-ok, otherwise here are some gluten free carb sources that make great flours for your bread!

    In this recipe you can swap out the carb source with any of the 3 above in the same exact proportion and youll be more than happy with the bread result I guarantee it!

    The measurements are all volumetric because this is the most accurate way to make sure youre getting the proper amount of ingredients – so youll need a scale.

    A whole wheat dough needs to be kneaded really well for a great texture and flavor as well as for the rise. If you don’t knead the dough long enough, you might not get as good a rise.

    Also, don’t overproof the bread dough–that could cause your loaves to fall flat in the oven. Stick to the recommended times, going only slightly longer if necessary.
