WEST FARGO Customers were lined up around the corner of Nothing Bundt Cakes when owners Rinda Norberg and Jenna Polich arrived an hour prior to the grand opening celebration that started at 10 a.m. Saturday, June 2.
“The first 50 people got free cake, and there was a line halfway around the building,” Norberg said.
“I pulled up and was like, ‘Oh boy, here we go,'” Polich added. “There were people in chairs and music playing.”
Doris Callahan of Fargo was not among the crowd, but she was at the store at 816 24th Ave. E. near Costco when a Forum reporter stopped by Tuesday, June 4.

Nothing Bundt Cakes is a national chain of bakeries that sells Bundt cakes in several flavors, including: chocolate/chocolate chip classic vanilla red velvet white chocolate raspberry confetti carrot lemon marble and pecan praline. A featured flavor, which is currently lemon raspberry, is switched out every few months. All flavors come with Nothing Bundt Cakes signature frosting made with cream cheese and real butter.
Before attending training in Dallas, Norberg said her favorite flavor was lemon and Polich liked carrot. They were surprised at their favorite after trying them all.
“We tried the gluten-free and it was actually our favorite. It’s a chocolate chip cookie and it tastes just like it,” Norberg said.

“We got lucky,” Norberg said.

Western Mall Full With Addition Of Bundt Cake Bakery
The Western Mall in Sioux Falls is officially full now.
Nothing Bundt Cakes plans to fill the last opening.
The bakery, which sells everything from bite-size to 10 inch bundt cakes, will go into the former Counter Elements location near HuHot.
The owners, Bryon and Diane Meyer, hope to open December 1.
Well sell 11 different flavors of cakes, along with a featured flavor that changes with the season, Diane said.
Miner Brewing Company and Prairie Berry Winery Taproom also plans to open at the mall soon.
This is big news for the Western Mall, as many malls across the country are struggling to fill open spaces.
In a time where people think the retail market is soft, we have fully leased the Western Mall. The mall has approximately 525,000 square feet of space. The mall has an excellent mix with anchors, such as Ashley Furniture and Scheels and many small shops and restaurants, Vice President of Commercial Real Estate for Lloyd Companies, Raquel Blount, said.
We love the location because 41st and Western is very busy, and it has high visibility, Diane said.
