  • First, preheat the oven to 335ºF .
  • Prepare two 8 cake pans with cake goop or another pan release.
  • Then, measure out all of your ingredients using a digital kitchen scale and make sure your eggs, milk and butter are all room temperature or even a little on the warm side so everything mixes together properly.
  • In a mixing bowl, combine together the buttermilk, melted butter, oil, eggs, and vanilla. Your wet ingredients should all be slightly warm. I microwave my buttermilk for about 30 seconds and place my eggs in a bowl of warm water.

    Baking separately also ensures that your cake layers don’t get overdone. 6″ cakes bake faster than 9″ cakes, and if your oven is anything like mine, it tends to cool down a lot each time I open the door.
