How To Make The 3

Let’s start with this great 3-ingredient chocolate cake: First, chop the chocolate and melt it with the butter in a hot water bath. Then transfer to a mixing bowl, set aside, and let cool slightly. Meanwhile, beat the eggs in a food processor for 5-10 minutes until very light and fluffy. Preheat the oven to 340°F/170°C. The cake will later be cooked in a water bath. To do this, cover the bottom of a small springform pan , which should close very well, with baking paper, and grease the edges well. Additionally, “wrap” completely all around with aluminum foil.

Add about a third of the egg mixture to the melted, lukewarm chocolate and fold in carefully but gently with a dough scraper. Maintaining the volume as much as possible in the process is important. Then fold in the remaining egg mixture in the same way. Fill a deep baking sheet, large baking dish, or roaster with hot water that should be about two-thirds as high as the springform pan. Place on an oven rack, place the cake in the springform pan in the water, and bake in the water bath for about 25 minutes.

After this, carefully remove it from the water bath and let it cool briefly. Turn out the cake, remove the baking paper and eat either lukewarm or well-chilled. It also tastes great straight from the freezer. So: enjoy!

Part cheesecake, part decadent white chocolate cake, 100 per cent amazing. With only three ingredients this is certain to become your new favourite .

  • 700g CADBURY Baking , chopped
  • 750g cream cheese, chopped, softened
  • 6 eggs, separated
  • Step 1 Preheat oven to 130C. Place 250g white chocolate in a baking dish. Roast for 10 minutes, then remove and stir. Return to oven and roast, stirring every 5 minutes, for 25 minutes or until dark golden and caramelised.
  • Step 4 Add 250g cream cheese to caramelised chocolate and stir well to combine. Then add the egg yolks and mix to combine. Using an electric mixer, beat eggwhites to stiff peaks. Working in 3 batches, fold eggwhites into the chocolate mixture. Divide mixture between prepared cake pans and bake for 1 hour 30 minutes or until cake springs back in the centre when pressed lightly. Cool in pans for 20 minutes, then transfer cakes in pans to the fridge to cool completely .
  • Step 5 To make the icing, melt 300g white chocolate in a heatproof bowl set over a saucepan of gently simmering water . Transfer to an electric mixer and add remaining 500g cream cheese. Beat on medium speed for 8 minutes or until smooth and glossy. Release cakes from pans and place one cake layer on a cake stand, then spread 1/2 cup cream cheese icing over the top. Top with second cake layer and using a palette knife, spread remaining icing over the top and sides of the cake. Refrigerate until ready to serve.

  • Sift the flour first. Getting rid of any lumps and clumps of flour will ensure that you have a consistent texture.
  • When adding flour, carefully add it in by thirds into the egg mixture. Lightly mixing in the flour with a rubber spatula will ensure you dont over-mix and compromise the fluffiness of your beaten eggs.
  • Your baking pan size should be 9 inches or larger. This cake can easily overflow during the baking process.
  • Dont open the oven door during the early baking process because the cake can collapse when hit with a sudden temperature change.
  • Test to see if the cake is fully baked by pricking it with a toothpick. Only test towards the end of baking time. If it comes out clean, youre good to go!
  • Cut the sponge cake only when its fully cooled to room temperature.

Hot Tip: To make a chocolate version of the sponge cake, add 3 Tbsp of cacao powder to the flour.

There are only really two main steps in making this simple cake.

First, the eggs and sugar are beaten together with an electric mixer for about eight minutes. During this time, the mixture will turn from frothy to thick and creamy. You will also notice the egg mixture change color from yellow to a very pale yellow.

Then you gently fold in the flour. I recommend using a mesh strainer to add in the flour. While the recipe doesnt require you to use sifted flour, you dont want overmix your batter. Flour tends to clump up and if you just add in the flour as is, you might mix too hard to get all of the flour incorporated, which can cause too much of the air to deflate from the egg mixture. Running the flour through a mesh strainer or a flour sifter will let the flour fall in more gently and make it much easier to quickly incorporate the flour. If you dont own a strainer or sifter, you can also sprinkle the flour in with your hands, breaking up any flour clumps between your fingers.
