I wanted lots of banana flavor and I noticed that the recipes that called for more bananas yielded a moister bread. So I decided to go with 4 medium-size bananas.

Im a big fan of only needing one good recipe for most things and, for me, this is the last banana bread recipe Ill ever need.

This version of our favorite cake for breakfast food is based on a Hawaiian style banana bread. Sweet, very banana-y, no additional flavors , and olive oil for a just-slghtly effect. The ratios in this recipe ensure an ultra-moist, perfect-every-time loaf.

This loaf takes about 90 minutes start-to-finish and needs a bit of time to cool, so plan to make it fairly well in advance to let it set properly. Its delicious at room temperature, perfect for making the night before a breakfast or brunch event.

Preheat the oven to 350F and spray a loaf pan with cooking spray.

In a large mixing bowl, mash the bananas with a fork until mostly smooth.

Add the sugar, oil, and eggs to the banana mixture. Use the fork or a whisk to combine until smooth.

Add the flour, baking soda, and salt to the bowl all at once. Gently mix in until just combined. Transfer the banana bread batter to the loaf pan.

Bake the banana bread for 65-70 minutes until very brown and a toothpick or cake tester comes out clean when inserted into the center of the banana bread.

If your bananas are not yet brown or soft then you can place them in a 300F degree oven for 20 minutes or until dark brown. I like to freeze my bananas, whole, inside the peel, in the freezer.

Then, when Im ready to bake, I pop them in the microwave, cut off the tops, and slide the banana right out of the peel!

Full disclosure: it looks absolutely disgusting when it comes out. Its mushy and quite unnerving. BUT, I swear, this trick is life changing when it comes to baking with bananas!

Best of all- when its frozen like that, it becomes very mushy, so you dont need to worry about mashing the banana separately. Just slide it right into the bowl and mix away!
