    There is always confusion about pound cakes and bundt cakes and how they relate to each other. Believe me, I was often wrong at first when using the terms too.

    A Pound Cake is dense and heavy its not a light and fluffy cake . Its tender but thick!

    A bundt cake is simple one made in a bundt pan, which is where I think the confusion stems from.

    Pound cakes are often baked in bundt pans often called a bundt cake, but not all bundt cakes are pound cakes.

    For example, my Lemon Butter Cake is a bundt cake but it is NOT a pound cake, and you can tell by the crumb and taste.

The original recipe was simple with one pound of flour, eggs, butter and sugar, hence getting the name pound cake.While the original recipe back from centuries was heavy with 1 pound of ingredients each, these days the pound cakes are much lighter with aplenty of variations such as Cream Cheese Pound Cake and Old Fashioned Sour Cream Pound Cake.

    Pound cake is the mother of all butter cakes. While its pretty humbleblocky shape, no layers, frostings, or fillingspound cakes dense, velvety texture and pure butter flavor make it so undeniably delicious that, in my opinion, it ranks far ahead of many more complicated or elegant cakes.

    Traditional pound cakes actually were made with one pound each of butter, sugar, eggs, and flour . These old-style cakes are quite good, but on the verge of being too solid for my taste.

    On my recent quest for the perfect pound cake, I looked through the recipes that Ive amassed over years of owning a bakery and teaching baking. I pulled out the ones I remembered as being exceptionally good, and I soon noticed a pattern: all of my favorite pound cake recipes broke from the traditional formula and contained some leavening and an additional dairy productbuttermilk, sour cream, or cream cheese. The addition of both of these types of ingredients seems to make a slightly moister, lighter textured cake that still has that fine-crumbed sliceability and mellow butter flavor of the traditional version.

    Baking is really a big chemistry experiment, and your choice of ingredients and the way you handle them can radically change the nature of a cake.     Calling all lemon lovers. Sweet and moist, this very lemony pound cake has sour cream for a perfect dense crumb, lemon zest and juice for that bright lemon flavor we all love, and a wonderful golden brown top. Easy to make, it is very versatile and yet fantastic with a simple glaze!

    As deceptively simple as the title is, considering the years I’ve been baking and the fact that plain cakes are probably my favorite thing to bake, this is a remarkable recipe which now holds the number one spot for pound cake, citrus or otherwise. Tip: if you take out the lemon in the recipe and only use vanilla extract, you have a fantastic classic pound cake recipe.

    But lemon is a crowd-pleaser, we all know that, right?

    And pound cakes are old-fashioned and wonderful and they keep well and the ingredients are everyday staples. So both combined make for a fabulously simple recipe. Our fav homemade lemon pound cake recipe I’ve made so far.

    How To Make A Pound Cake With Sour Cream

    Heres an overview of how to bake a sour cream bundt cake. More detailed instructions are in the recipe card.

  • Be you get started, make sure you allow the butter and sour cream to warm up to room temperature. Then, when youre ready to mix up the cake, preheat the oven to 325° F and spray your bundt pan with non-stick baking spray.
  • Add butter and sugar to the bowl of your stand mixer or use a large bowl with a handheld mixer. Mix them together for 3-4 minutes on high speed, until very pale yellow and fluffy.
  • Add the eggs, one at a time, combining well after each egg. Scrape down the sides of your bowl as needed with a spatula.
  • Turn your mixer down to its lowest speed, and slowly add flour into the batter in two increments. Then add the salt and baking soda. Be careful not to overbeat.
  • Last, add the sour cream and vanilla extract, scrape down the sides of the bowl, and mix until just combined, then turn off the mixer.
  • Pour the cake batter into the prepared bundt pan and bake in the oven for 1 hour and 15-25 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • Cool the sour cream bundt cake in the pan on a wire rack for 10 minutes then invert the sour cream cake onto a serving plate for at least an hour or until the cake is cool to touch.
  • Once the cake is cooled, slice it up and serve!

    How To Make This Recipe

    Step 1: Preheat your oven to 350 degrees Fahrenheit. Then, flour and grease a 10-inch bundt pan.

    Step 2: Add the flour and baking powder to a large mixing bowl. Give it a quick whisk and set aside.

    Step 3: In another large bowl, cream butter, sugar, eggs, vanilla extract, and lemon zest with a hand mixer or a stand mixer.

    Make sure the ingredients are combined well.

    Step 4: In a separate small bowl, add the sour cream and 4 tablespoons of the lemon juice. Whisk together.

    Step 4: With the electric mixer on low speed, add ¼ of the dry ingredients, followed by ½ of the sour cream mixture and butter mixture. Continue alternating until the remaining flour mixture is incorporated and all components are added to the bowl.

    Step 5: Pour batter into your bundt pan and smooth the top so its even. Bake for 55 to 60 minutes, or until a long toothpick or cake tester inserted into the center of the cake comes out clean.

    Step 6: While the cake cools, make your icing.

    Step 7: In a separate bowl or the bowl of a stand mixer, mix the powdered sugar , heavy whipping cream, and two tablespoons lemon juice. Keep adding small amounts of heavy cream until you get the right consistency. It should be slightly thick but runny enough that it slides down the sides of the cake.

    Homemade Lemon Pound Cake Tastes Even Better The Next Day

    Personally, I think this is the best lemon pound cake recipe as it has just the right balance of classic buttery, vanilla pound cake flavors with a punch of acidity from the lemon.

    And as hard as it may be to resist, I find this sour cream pound cake tastes even better the next day. Once the cake has cooled, simply store in an airtight container at room temp.

    It is super simple to make your own lemon sour cream pound cake right in your own kitchen and it will taste better than what you get at the store.
