I love raisins in my bread due to their sweetness and this recipe does not disappoint.

The bread has a lovely sweet flavor and a moist, dense texture.

I like to add extra raisins on top of the loaf before baking, which gives the bread an extra burst of flavor and sweetness.

This bread is lovely on its own, or sliced and served with butter or jam. Its also great for toast or for making sandwiches.

How To Make Gluten Free Pancakes

Always follow the recipe first when making easy gluten-free pancakes. Don’t work with substitutions until you know how the recipe works.

Once your batter is ready, heat your pan or electric griddle. I received an electric griddle last year and it’s been my best friend since.

  • Add all dry ingredient to a large mixing bowl.
  • Whisk until combine.
  • Add the wet ingredients.
  • Stir just until combined. Some lumps will remain.
  • Ladle ¼ cup of pancake batter onto your hot griddle, or pan: measure out about ¼ cup of gluten-free pancake batter onto your hot oil-pan or electric griddle. Use the back of the measuring cup to help spread the batter some.
  • Cook for 2-3 minutes, or until bubbles form around the edges. When the edges are golden brown and the bubbles are popping up through the center of the pancake, use your spatula and take a peak to see if they are brown to your liking. Then flip the gluten-free pancake and cook for another 5 minutes or so. Always check for doneness before you remove your pancake from the pan or griddle.
  • This gluten free pancakes recipe is super simple to make. If you find that your pancake batter is too thick to spread, most likely you added too much flour or your buttermilk was too thick.

    Simply add water a tablespoon at a time until you get the desired consistency.

    Yes. Is the straight answer. The two gluten free flour blends that I have developed for my wholemeal gluten free bread maker recipes are finally-tuned to work. One is oat-based and the other is oat and corn free for anyone unable to tolerate these particular ingredients.

    While it is possible you can switch out one flour for another, I would do this carefully using alternative flours that are as similar as possible. Test cautiously and expect some changes in texture and structure. My Gluten Free Flours and Flour Blending Page is a good place to start with substitution options.

    It may seem that I am being picky, but by the last few development-loaves, I was literally switching flour ratios in 5 to 10g portions. If you want good gluten free bread, that tastes like bread, the detail matters.

    To be sure, I did test the loaf with other commercial flour blends with limited success. The white starch-based blends tested were unstable and had that typical cakey or gummy texture. The wholegrain commercial blend I tried was quite dry and had a much shorter shelf-life.
