How to make EASY GLUTEN FREE , dairy free , eggs free sandwich BREAD

We have been enjoying my gluten free sandwich bread, but I have been looking for something a little different. I wanted something a little more dense.

I was looking for a bread that would work well for paninis or grilled cheese sandwiches. I recently saw a recipe for a gluten free, dairy free, and egg free bread, for the bread machine. It sounded like what I was looking for, but I was not sure if I wanted to try it.

I was skeptical about this bread working. I mean how could it work without gluten, dairy, and eggs, but I decided to give it a try.

When I took it out of the bread machine, it was so ugly that I was sure this was another gluten free disaster that would end up in the trash, but I was wrong. This bread was surprisingly good.

I had planned on making grilled cheese sandwiches out of it, because I have been craving one of those, but we ate it for dinner with pasta, and there was none left for sandwiches.

So, if you are looking for a good gluten free bread to use for paninis or grilled cheese sandwiches you should give this a try. It is definitely going on my list of gluten free recipes to make again.

What Is Psyllium Husk And What Is Its Role In Gluten Free Bread

This is probably the only unfamiliar ingredient in the list above but one that is absolutely crucial if you want to bake proper gluten free bread.

And before you ask: there is no substitute for psyllium husk.

Psyllium husk is available in two forms: as the rough husk or as a fine powder. This recipe uses the rough husk, which has the following appearance:

When its mixed with water, psyllium husk forms a gel and this is what acts as the gluten substitute, both in the dough and in the baked loaf.

Before baking, the psyllium gel helps to create a dough that can be kneaded and shaped . It also gives the dough enough elasticity so that it can trap the gas produced through the yeast action and expand during the bulk fermentation and the final proof.

In the final baked loaf, psyllium is responsible for the characteristic elasticity and flexibility of the bread, as well as its amazing chewy texture with an open crumb.

A Note On Measurements

While Ive included the volume measurements in the recipe card below, if at all possible : USE METRIC GRAM MEASUREMENTS IF YOU CAN.

Theyre much more precise and produce more reliably delicious results. This is true for pretty much all of baking a kitchen scale will invariably give better results than cups and tablespoons.

Can I Make This Recipe In A Bread Machine

Yes, you can! Even though I developed this gluten-free bread recipe to be an oven-baked recipe, I also tested it in my bread machine. Just swap out these ingredients for the ingredients in my gluten-free bread machine recipe and follow the recipes directions. I always recommend using a bread machine that has a gluten-free setting.

Gluten Sensitivities And Celiac Disease

If you have celiac disease or love someone with this disease, you know how difficult it is to get great tasting gluten free baked goods. And eating gluten should never be an option for someone with celiac disease. It will shorten your life.

Luckily, I am only sensitive to gluten, not allergic. Since it causes health problems for me, I generally make all my own foods from scratch. Recipe Step By Step Directions:

Step 1: Add the dry ingredients and whisk to blend in a large bowl.

Step 2: Add your wet ingredients and blend in a smaller bowl.

TIP: Many bread recipe directions say you can dump all ingredients in the bread maker. Do not do this! When mixing as many ingredients as is needed for gluten-free bread, you risk the ingredients not getting mixed thoroughly, which can affect how the bread turns out!

Recipe Notes & Substitutes

  • Some readers replaced the buckwheat flour with oat flour or sorghum flour and the bread still turned out amazing.
  • Rice flour works great in this bread recipe, but feel free to experiment with lentil flour, teff flour, sorghum flour, or quinoa flour.
  • You can use arrowroot flour instead of tapioca flour/starch. Cornstarch or potato starch will most likely work as well.
  • Chickpea flour is the same as garbanzo bean flour. It adds plant-based protein and I love adding it to bread. Some readers had success using oat flour instead.
  • Psyllium husk powder is the most important ingredient in this recipe and cannot be subbed by any other ingredient. Make sure to use psyllium husk POWDER. If you have psyllium husk , you can blend it in a blender or electric spice/coffee grinder until its a fine powder.

Best Gluten Free Flour For The Bread Machine

There are so many good gluten-free flour blends, and I tried a few while developing my recipe. Most didn’t perform the way I wanted I decided to create my own blend. I chose sorghum flour, brown rice flour, tapioca starch, potato starch, and ground flaxseed meal.

This combination of gluten free flours yielded the best results by far. This bread is a good gluten free sandwich bread. It holds up to peanut butter and jelly and a full lunchbox without breaking! The flavor and mouthfeel of the bread are light and fluffy.

NOTE: After two people reached out, I want to re-emphasize this recipe works with my custom flour blend or Cup4Cup, with a few modifications. See the FAQ for the modifications. Bob’s 1 to 1 and King Arthur Measure for Measure are not as good for yeast recipes.

Step 3: Open your bread machine and make sure the paddle is on the spinner. Pour in your mixed wet ingredients.

Step 4: Pour the whisked dry ingredients on top of the wet ingredients.

Step 5: Dump the yeast on top of the dry ingredients. Close the cover and press the button. My bread machine has a gluten free setting. If your bread machine has this setting, use it. After 5 minutes, take a soft rubber spatula and press the flour down from the sides. This tip will help prevent unmixed flour pockets on the side of your bread.

Step 6: This is what the batter looks like after the bread machine mixes the bread dough. You will see how wet this batter is compared to normal bread dough. This is what you want.

Mixing The Ingredients And Kneading The Dough

The BEST Gluten

First, mix the yeast and sugar with some warm water to activate the yeast. After 5 10 minutes, it will become bubbly and frothy, which means that the yeast is active. If theres no bubbles and/or foam formation, youll know that its inactive and you should open a new yeast package.

Next up, prepare the psyllium gel by mixing the psyllium husk with some water. The gel will begin to form within seconds.

Then:

  • Add the potato starch, brown rice flour, buckwheat flour,
  • and salt to a bowl,
  • and mix thoroughly to combine.
  • Make a well in the middle and add the yeast mixture,
  • the psyllium gel, and
  • the apple cider vinegar.
  • Now, we come to the mixing and kneading stage theres really no right or wrong way to knead gluten free bread, as you dont have to go though the stretching motions youd typically use to build up the elasticity in a gluten-containing wheat bread.

    Once the wet and the dry ingredients are combined, I tend to squeeze the dough through my fingers until smooth and homogeneous. After a few minutes youll notice the dough coming away from the sides and it will be easy to form it into a rough ball.

    While it wont have the same super-stretchy elasticity of a gluten-containing wheat dough, theres enough elasticity there that you can stretch portions of it without them breaking off.

    Once you complete one 360 degree rotation of the dough, you should be left with a ball of dough. Flip it seam side down and rotate in place to seal the seams.

    Months Of Testing Gluten

    Ive always had a penchant for baking bread and especially since weve been spending so much time at home this year, Ive been testing and experimenting with so many bread recipes.

    In the past few months, Ive made gluten-free no-knead bread , rosemary focaccia , easy gluten-free naan bread , among plenty of other bread recipes that Im still tinkering with and testing out.

    Tips For Measuring Gluten

    The best way to measure gluten-free flour is the spoon & level method. Using a spoon, scoop the flour into the measuring cup. After youve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup.

    Friends, please do not scoop the flour out of the bag with your measuring cup. If you do you may get more flour than the recipe calls for.

    Also, measure flour using nested measuring cups. Do not measure dry ingredients in a liquid measuring cup.

    Recommended Products For Gluten Free Bread Baking

    Below, you will find the tools that will help you get the best results on your gluten free bread adventure. Note that not all of them are strictly necessary a proofing basket can be replaced by a bowl lined with a clean tea towel, you can score the bread with a sharp knife, and a sturdy baking tray that holds heat really well can replace the cast iron skillet.

    However, these are the tools that will give the best bread, simply because thats what they were created and optimised for. For instance, the cast iron skillet and Dutch oven are excellent at holding onto heat, which helps give the bread that delicious crunchy crust.

    How Long To Bake Gluten

    This gluten-free bread recipe works best when baked for 60-65 minutes in the oven or on the gluten-free setting in a bread machine.

    Remember to cover your gluten-free bread with foil half-way through baking so it doesn’t over-brown.

    You might read that a loaf is done baking once it hits around 200 degrees F. Please bake this loaf 60-65 minutes even if your thermometer says otherwise.

    Dish By Dish Tips/tricks:

    • The Gluten-Free Bread Dough Will Be Wet and Sticky: Dont be alarmed when you see that the bread dough is wet and shaggy and sticky and shapeless strangely resembling cake batter as opposed to the firm and shapable traditional bread dough. It is completely normal and desired to have a wet bread dough when making gluten-free baked goods, because this will ensure a moister crumb once baked. Please DO NOT add more flour in an attempt to make the dough drier or more manageable. Gluten-free bread dough, unlike normal bread dough, does not required kneading, so it doesnt matter that you cant shape it with your hands since it will go straight into the loaf pan and take the shape of the pan.
    • Extra Fiber and Binding Power: If you want even more fiber and more binding powder, you can mix in 2 tablespoons of psyllium husk powder with the dry ingredients.
    • Add Flavor with Other Flours: If you would to add a bit more flavor and texture, you can replace 1/2 cup of the GF all-purpose flour blend with brown rice flour, sorghum flour, millet flour, buckwheat flour or almond flour.
    • Pan Size Will Determine the Height of Bread: I like using an 8 x 4 loaf pan because the bread rises slightly more in this smaller pan. If you use a larger pan , just note that the dough will spread out more and as a result will not rise as high compared to baking in a smaller pan.

    Do I Really Need To Weigh My Ingredients

    While Ive included volume measurements , I HIGHLY recommend weighing your main flours and water with a kitchen scale. Its the best way to ensure reliable, accurate, and precise results in bread baking. If at all possible, measure in gram measurements.

    In my experience, measuring by volume has given inconsistent results.

    Can I Make Flour Substitutions

    Cinnamon Blueberry Breakfast Bread: gluten

    Each flour has its own flavor and structure. If you make substitutions, it will change things a bit every time. Feel free to experiment as much as you like. Its how you learn what you like. When making substitutions, be sure to sub by weight not by volume measurement.

    I really LOVE the sorghum and buckwheat combination so I highly recommend that you stick with those.

    If you do not have brown rice flour, you can use millet flour or oat flour instead.

    If you do not have tapioca starch, you can use potato starch or arrowroot powder instead.
