How To Freeze Bananas For Future Banana Breads

  • Peel the bananas.
  • Freeze separated either into servings for the recipe or if you are freezing a ton freeze them on a baking sheet to avoid freezing together. You want to be able to easily separate them after freezing because once they de-thaw they will be very soft and impossible to not make a mess with.
  • When you are ready to make some banana bread, pop the frozen bananas in a bowl and let them thaw before baking, works like a charm.

    To help with keeping it healthier I just sprinkle chocolate chips onto the top of the loaf prior to baking vs. baking them into the batter also. This allows to have enough of that perfect chocolate banana flavor.

    Really, its perfect, it allows the banana bread to shine in all its glory but then the chocolate graces your taste buds with an heavenly experience and all is right with the world.

    How To Make Gluten

    Step 1: Prepare for baking. Preheat your oven to 350 degrees and grease your loaf pans with cooking spray, neutral-tasting oil, or butter.

    Step 2: Blend wet ingredients. Add the bananas to a large mixing bowl and mash with a fork. Add the butter to the bowl and mix until smooth. Then, add the coconut sugar and egg to the bowl and blend.

    Step 3: Whisk dry ingredients. Whisk the brown rice flour, oat flour, salt, baking soda, and baking powder to combine in a separate bowl.

    Step 4: Combine wet and dry mixtures. Pour the dry mixture into the bowl with the wet mixture and mix well. Then, gently stir in the chocolate chips and walnuts .

    Step 5: Bake. Divide batter into the 3 prepared mini loaf pans and bake in your preheated oven for 30 to 35 minutes or until a cake tester or toothpick inserted in the middle comes out clean.

    Step 6: Cool and serve. Let cool for at least 15 minutes in the pans and serve warm. If you’re not serving the bread immediately, allow the loaves to cool completely before storing. I’ve always basted my quick breads with melted butter as soon as they come out of the oven. This is something that my mom always did and it makes the top of the loaf, so moist and delicious! This is, of course, completely optional.

    Preparing this chocolate pumpkin loaf is nice and easy, with no mixer required and just 5 simple, low-effort steps.

    • First, preheat the oven to 360F/180C and line an 8×4-inch loaf pan with parchment paper.
    • Then, add all the dry ingredients to a large mixing bowl and stir with a spoon.
    • Next, add all the wet ingredients to the mixture and stir/whisk to combine. Fold/ stir in the chocolate chips.
    • Pour the chocolate pumpkin batter into the prepared pan, top it with more chocolate chips, and transfer it to the oven to bake for about 40 minutes.

Im a sucker for banana bread so I couldnt resist making it. I decided to make a gluten-free version of my favorite banana bread recipe. Lately, a few of my family members have switched over to a gluten-free diet so its been kind of hard adjusting.

    At first, I didnt know if I had to replace every ingredient when baking for them but Ive found a much easier way to make my own recipes. All you do is use Bobs Red Mill Wheat Free, Gluten-free, Dairy-Free, 1 to 1 baking flour. I love it because you basically replace all-purpose flour with Bobs Red Mill gluten-free flour. Simply follow your favorite baking recipe, replacing the wheat flour with this extraordinary blend.     Tips For Making The Best Moist Banana Bread:

    My secret to making insanely moist and incredible banana bread is: LOTS of bananas.

    Years and years ago, I discovered using more bananas makes banana bread incredibly moist and delicious.

    Not to mention, naturally sweet. Rather than adding a lot of oil or butter, much of the moisture can come from the bananas themselves without sacrificing flavor, moisture, or fluff.

    If anything, the more bananas, the better

    For this reason, I usually use a cup and a half of mashed ripe banana in one loaf of banana bread, which usually equates to 4 ripe bananas.

    For my grain-free banana bread recipes, I dont add any additional fat , as there is plenty sourced from the almond flour and coconut flour.

    Because gluten-free flour blends dont contain as much fat as almond flour or coconut flour, I use a small amount of melted butter to give the loaf a bit of fat love. Coconut oil and avocado oil work too!

    The massive amount of overripe bananas also enables you to cut down on the added sugar, which I see as a bonus.

    For the grain-free banana bread recipes, I add a just a couple tablespoons of pure maple syrup or coconut sugar to boost the sweetness to absolute perfection. You can also use cane sugar or just stick with the mashed bananas for sweetness.

    Make sure you use a gluten free chocolate variety, with no may contain warning. My go tos are Callebaut and Dr Oetker.

    Callebaut I typically buy in bulk on Amazon, and Dr Oetker is available in most UK supermarkets. Callebaut have a few dark chocolate varieties, I use their 54% one for this banana bread but feel free to go for the mega intense darker varieties if you are a dark choc fan :).

    Can I Use Baking Powder Instead Of Baking Soda

    Yes! It’s not a 1 to 1 but if you’re in a pinch you can use baking powder to help your banana bread rise.

    To substitute the baking soda with baking powder, use 4 teaspoons for every teaspoon of baking soda called for in a recipe.

    For example, in this recipe, it calls for 1 teaspoon of baking soda, simply use 4 teaspoons of baking powder .

    Which Chocolate Chips Are Best To Use In This Recipe

    Mini chocolate chips are the best chocolate chips to use in this gluten-free banana bread recipe! Because they’re smaller, they’re less likely to sink to the bottom, and you get chocolate chips in every bite.

    If you’re using regular chocolate chips or chopped pieces of chocolate, toss them in a couple of tablespoons of flour before adding them to the batter. This helps to keep them from sinking to the bottom of the bread.

    I also find that if you sprinkle regular chocolate chips on the loaf before baking it in the oven, they’re more likely to get burnt than if you used mini chocolate chips. If you’re using normal-sized chocolate chips and you want to sprinkle some on the top of your banana bread, do it after it comes out of the oven to avoid burning.

    • Oat flour- pre-made is ideal, but you can blend rolled oats in your blender to make your own

    If you’d like to use a different gluten free flour, here are a couple of tips:

  • Be sure to use a gluten free flour blend, not a single flour.
  • Opt for a blend titled something along the lines of “1 to 1 cup” or “Compared to All Purpose Flour” this way you’ll hopefully have more success by making a cake with ingredients that act similarly.
  • If you search “1 to 1 cup gluten free flour” in Google, multiple options come up – these should be the kind options you stick with.

    Ingredients In Gluten Free Chocolate Banana Bread

    Bananas – This recipe calls for two overripe bananas. The more overripe they are, the more flavor they will add.

    Unsweetened applesauce – If you don’t have applesauce you can increase it to 3 overripe bananas.

    Oil – You can use your oil of choice. We used avocado oil

    Sugar – Add flavor and helps with the tender texture.

    How To Make Chocolate Chip Walnut Banana Bread

    As the name suggests, this recipe is unbelievably simple to make!

  • Mash the bananas. Use a fork to mash the bananas in a large bowl until a smooth, creamy texture is formed.
  • Combined the Ingredients. In a second large bowl, whisk the melted butter and sugar. Then, whisk in the eggs and vanilla until smooth. Stir in the salt, sour cream, mashed bananas, and baking soda.
  • Sift. Sift the flour into the bowl with the remaining ingredients, and mix by hand or with a hand mixer until it is just combined.
  • Fold. Gently fold in the chocolate chips, walnuts, and sliced bananas, making sure they are well-distributed.
  • Bake. Pour the batter into a greased loaf pan, and sprinkle extra chocolate chips on top followed by the sliced banana. Bake your banana bread in the oven until a toothpick can be inserted into the center and comes out clean.
