For the frosting, I made my usual favorite Easiest Swiss Meringue Buttercream, and after it was finished, I stirred in a few cups of very fine Oreo cookie crumbs. I had my doubts during the process but I think the end result really works! Not only does it taste great, but the spotted light gray appearance really does look like cookies and cream. For the frosting between the cake layers, I also added a healthy handful of chopped-up Oreo cookies. I loved the texture they added, but they did make cutting beautifully clean and neat slices kind of difficult! Just be prepared to have a few stray Oreo chunks embed themselves in your cake layers as you slice. Trust me when I tell you its a small price to pay for cookies and cream bliss.

How To Make Ice Cream Cake

A lot of people are hesitant to make ice cream cakes because it seems difficult, but its actually really simple! It does take time since you have to freeze it after you add each layer , but believe me, it is SO worth it because you end up with these 5 delicious layers:

  • Buttery Oreo Crust
  • Oreo Ice Cream you can change this to be any ice cream that tastes good with Oreos
  • Crushed Oreo Topping

COOKIE CRUST. Add the crushed cookie crumbs to a bowl, reserving about ½ cup for the topping. Add the melted butter to the crushed Oreos, mix it up, then press it into the bottom of a greased 9×13 pan.

ICE CREAM. Spread the softened Cookies and Cream ice cream over the crust and freeze for 2 hours.

FUDGE SAUCE. Take it out, drizzle Chocolate Fudge Sauce over the ice cream and freeze for another hour. Make sure the sauce is cold because hot fudge sauce can cause the ice cream to melt.

FREEZE + ENJOY! Finally, add Whipped Cream and sprinkle with the remaining Oreos, then freeze for 2 more hours. Simple!

    How To Cut An Ice Cream Cake

    Homemade Cookies n Cream Cake w/ Oreo Buttercream Frosting

    Once youre ready to serve your Oreo cookie-filled cake, allow it to sit at room temperature for 15-20 minutes to soften up a bit. This will make it SO much easier to cut through.

    Then, run a butterknife under hot water and dry it off. Run the warm knife around the sides of the cake to release it from the springform pan, and then gently remove the outer ring.

    To cut the cake into slices, run a large and very sharp knife under hot water, then dry it off with a clean towel. Slice the cake into wedges, and remove with a cake server.

    If you have any leftover ice cream cake, keep all remaining slices together and cover tightly. Freeze for up to 1 month, and allow to thaw for 10-15 minutes before slicing and serving. A double wrapping of plastic wrap and foil will help keep the cake fresher for longer.

    After baking the cookies and cream cake layers, we chilled the whisk attachment for our stand mixer as well as our mixing bowl until very cold. This is in preparation of our our Whipped Cream Filling.

  • Start by preheating the oven to 350 degrees F and prepping your three 8-inch cake pans. I like to use cut-out parchment paper circles in the bottoms of my cake pans as well as spraying them with baking spray so there is no risk of them sticking.
  • In a large bowl, beat the sugar, oil, and butter together for 2-3 minutes until creamy and light. This can be done using a stand mixer fitted with the paddle attachment or with a hand mixer.
  • Add the egg whites and beat well, stopping to scrape the bottom and sides of the bowl so everything gets thoroughly combined.
  • Mix in the sour cream and vanilla extract until smooth.
  • Alternate adding the dry ingredients with the milk. I always add the baking powder, baking soda, and salt with half of the flour first and I sprinkle them in rather than dump them in a clump, rather than bothering to whisk them in a separate bowl. Mix just until combined between additions so as not to overwork the batter, and be sure to scrape the bottom and sides of the bowl.
  • Fold the broken up Oreo chunks into the batter by hand. This prevents the batter from turning grey so you have a nice bright white contrast between the batter and the Oreos for a beautiful appearance when sliced.
  • Evenly divide the batter between the prepared cake pans. It’s about 6-7 cups of batter total, so it can be helpful to measure 2 cups of batter into each pan so you know you will end up with layers that are the same size.

    Add The Softened Ice Cream

    After your Oreo crust has been chilling for 10-15 minutes or so, you can go ahead and set your cookies and cream ice cream on the counter to soften up a little bit.

    After 15-20 minutes on the counter, it should be soft enough to spread easily inside the chilled Oreo crust. If its still a bit stiff, give it a few more minutes and try again.

    • Use a kitchen scale to make sure each pan has an equal amount of batter in it. If you dont have one try using a toothpick in the center to measure the height of the batter, like an oil gauge!
    • Just as a hint if you use cake strips when baking youll get a flat top and more tender sides. Cake strips are just wet fabric you wrap around the edge of the cake pans. You can make your own or buy a set online, I have a blog post on them and they are a game-changer!!
    • Before you add the ganache for the drip, test the consistency on a plate youre holding perpendicular to the floor. If the ganache is too thick add a tablespoon of cream and you might need to heat the mixture as well.
    • You can make the cake layers in advance, wrap them up and store at room temperature for a day or in the fridge for three days.

  • Beat together the frozen whipped topping and the cream cheese in a medium sized mixing bowl. Beat until the mixture is thoroughly mixed, and set to the side when done.
