Holiday Recipe: Mint Chocolate Chip Ice Cream Cake

Home for the Holidays Series: This year, local reporters and editors are using Thanksgiving week to share our favorite holiday traditions and recipes with you, our readers.

Ingredients:

  • 1/2 gallon mint chocolate chip ice cream
  • 12.8 oz. jar Hersheys hot fudge

Directions:

FIRST: Take your ice cream out of the freezer 30-45 minutes before building the dessert

  • Pour Oreos in a gallon Ziplock bag. Use a rolling pin and break up Oreos into smaller pieces.
  • In a separate bowl, melt butter and add to Oreos. Mix and pour into a 9×13 pan.
  • Cover the bottom of the pan with the mixture, pressing down to flatten into a crust.
  • Scoop ice cream on top of crust. Using a spatula, distribute the ice cream evenly in the pan.
  • Heat up hot fudge in the microwave for 45 seconds. Pour on top of ice cream.
  • Place the lid on the pan and freeze for a minimum of four hours before use.

CHOCOLATE CAKE

1 1/2 cups Unbleached All-Purpose 1 1/2 cups Sugar3/4 cup Unsweetened Dutch Cocoa Powder3/4 teaspoon Baking Powder1 1/4 teaspoons Kosher Salt2 large Eggs, room temperature3/4 cup Buttermilk, room temperature3/4 cup hot Water2 teaspoons pure Vanilla Extract6 tablespoons Vegetable Oil

On Quart Mint Chip Ice Cream

1/4 1/2 cup Chocolate Chips

WHIPPED CREAM TOPPING

  • 1 pint of whipping cream
  • 2 Tablespoons powdered sugar

How To Make An Ice Cream Cake

1. Line an 8-inch cake pan with plastic wrap. Transfer all the ice cream to your lined cake pan and then cover with another layer of plastic. Press down into a flat layer and freeze.

2. Prepare and cool an 8-inch chocolate cake and cover the top with the chocolate fudge sauce using an offset spatula.

3. Sprinkle chopped cookies on top of the hot fudge.

4. Remove the ice cream layer from the freezer, unwrap it, and place it on top of the fudge. Cover the whole thing in plastic and place in the freezer while you make the whipped cream.

5. Combine cold whipping cream, sugar, and vanilla and mix starting on low. Gradually increase speed to high and mix until very soft peaks form. Finish off by whisking the whipped cream by hand until the peaks firm up. See my Whipped Cream Recipe for more instructions.

6. Cover the cake with the whipped cream and transfer the rest to a piping bag fitted with a large closed star tip.

7. Pipe a drip of chocolate onto the edge of the entire cake.

8. Pipe a scalloped pattern onto the top edge of the cake with the reserved whipped cream. Press crumbled cookies onto the bottom edge, and the cake is ready to serve.

We used Martha Stewarts one-bowl chocolate cake recipe. You could easily make the chocolate cake layer with your favorite boxed cake mix. Swap out any flavor for chocolate like vanilla or strawberry.

The same thing goes for the ice cream! Youll just need a quart of your favorite ice cream, we used mint chip because thats what the birthday boy requested.

We added extra chocolate chips on top of our ice cream, but you could also add another surprise element and add some crumbled mint Oreo cookies to the mix instead of chocolate chips, or maybe even both! To make the cake extra minty, why not add a little mint extract to the whipped cream topping!

If you dont like chocolate or mint, any other cookies would work like graham crackers .

How To Make Whipping Cream:

  • Place your bowl and whisk in the freezer for about 15 minutes, or until they are super cold.
  • Pour in cold heavy whipping cream, whisk until stiff peak forms, about 1-2 minutes, dont over mix because whipping cream can turn into butter.
  • Add cup condensed milk and 1 tablespoon of sour cream, whisk for about 2-3 minutes. Cover and refrigerate until you are ready to use it.

    • Use a small 6 inch springform pan that is 3 inches high. this makes the cake easy to remove from the pan.
    • Prepare a brownie mix according to the directions on the box and bake in oven until a toothpick comes out clean..
    • Bake the brownies according to the directions on the back of the box in the oven until a toothpick comes out clean.
    • Cool and cut out two six inch circles. Be sure and save the left over brownie for the top of the cake.
    • Place one brownie layer into the spring form pan and add ice cream layer using one entire pint, over the top of brownie layer. Allow ice cream to sit at room temperature for 10 minutes to soften and make it easier to spread over brownie. layer. Smooth ice cream into an even layer
    • Add the second round of brownie and then another pint of ice cream.
    • Cover with plastic wrap and return to the freezer to harden up.
    • To serve, remove cake from the pan and top with hot fudge sauce or caramel sauce and cubes of leftover brownie. May also add whipped cream.

I like real cake layers in mine, and thats exactly how I designed todays ice cream cake recipe! Punctuated with fun sprinkles and frosted with stabilized whipped cream, never has a cake screamed its time to party so much since my Zebra cake!

    My ice cream cake recipe consists of fudgy, rich chocolate cake layers and an incredibly easy ice cream center . The cake layers themselves are a slightly scaled down version of my chocolate cupcakes . The cake layers were specifically designed to be frozen and eaten cold, unlike most of my cake recipes.

    Ive included many recipes notes and a video below, and I definitely recommend you watch the video if youre nervous about assembling your cake. I like to use an acetate cake collar to make things easy, but I also include instructions in case you dont have or dont want to buy one.

    Make The Ice Cream Cake

    • Line a 8×3 cake pan with a generous layer of plastic wrap to cover the bottom and sides of the pan.
    • Spread the softened chocolate ice cream into an even layer. Freeze for 30 minutes. Set out the vanilla ice cream to soften while the chocolate ice cream layer freezes.
    • Remove the cake from the freezer. Spread the chocolate fudge in an even layer over the chocolate ice cream. Sprinkle the cookie crumbs over the fudge. Freeze for 10 minutes to set the fudge layer.
    • Spread the softened vanilla ice cream layer over the cookie crumbs. Freeze for 2-3 hours until firm.

    Make the chocolate cake: Grease and flour a 7-inch springform pan. Line sides with parchment paper, leaving a 2-inch overhang.

    Preheat oven to 350°F.

    Mix cocoa powder and hot water until well combined. Set aside.

    Sift flour, baking powder, baking soda, and salt into a bowl. Set aside.

    In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until pale and fluffy, at least 5 minutes. Add egg and egg yolk one at a time, beating well and scraping after each addition. Add vanilla extract and mix until combined. At low speed, add dry ingredients alternately with cocoa mixture, starting with dry ingredients.

    Pour into prepared pan and bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean. Let cake cool in the pan on a wire rack, then refrigerate for at least 1 hour.

    Make the ice cream layer: Whip cream until fluffy and stiff peaks form.

    Spread ice cream on top of cake layer. Top with chocolate chips, marshmallows, and walnuts. Spread whipped cream on top of ice cream. Make small peaks on the surface with the back of a spoon, if desired.

    How Do I Store This Cake

    Keep the ice cream cake in the freezer until 30 minutes before youre ready to serve, then transfer the cake to the fridge or the counter. You need to keep the cake in the freezer as itll melt if stored long-term in the refrigerator. Transferring the cake to the fridge or the counter for 30 minutes will allow the ice cream layer to soften up just enough that there isnt a ton of resistance when cutting through but still firm enough to enjoy.

    Easy Homemade Ice Cream Cake

    For as long as I can remember, ice cream cakes have been a staple birthday cake in our house when we were kids. My dad STILL makes his own ice cream cake for his birthday at nearly 70 years old and sends us a picture every year.     How To Store Chocolate Cake Ice

    This chocolate cake ice-cream is actually the perfect recipe to make ahead of time because you can sit and enjoy it anytime you want! You can combine everything, cover it and put it in the refrigerator to freeze. It can stay good for 4-5 days in the freezer. I would recommend you that if youre planning to present the chocolate cake ice-cream nicely like I did, then only take the ice-cream out of the freezer 5 minutes before serving. This recipe cannot be stored in the normal fridge because it will melt.

    • 1 cup Chocolate Cake Crumbs
    • ¼ tsp baking soda
  • In a bowl, take whipping cream and using an electric mixer, beat the whipping cream till you get soft peaks.
  • Add condensed milk and keep beating till it’s well combined.
  • To this, add chocolate cake crumbs and fold it in gently using a spatula.
  • Pour the ice cream in an airtight container and refrigerate for 8 hours or overnight.
  • To make condensed milk at home, in a heavy bottom pan add milk and sugar and bring it to a boil while stirring it constantly.
  • Cook for atleast 10 minutes or until it reduces to little more than half its quantity.
  • Now lower the flame and add baking soda. Stir it constantly for next 5 to 7 minutes till it becomes slightly thick.
  • Transfer it in a jar and let it cool down completely.

    So last weekend I got my chance when my daughters best friend came over for lunch. She loves food and like me, especially desserts. So I knew this Chocolate Ice Cream Cake would be perfect.

    The girls met 9 years ago when they took swimming lessons together. They hit it off immediately and to tell the truth I found a very good friend in her mother.

    Lasagna is usually the Pasta of choice for these visits and a Super Tasty Dessert. Although forget the Nutella, probably one of the few Italians or Italian kids who doesnt like Nutella.
