The Secret to the Best Chocolate Cake: Add Mayonnaise
  • The magic mayo helps add the moisture that many chocolate cakes are lacking.
  • Even though I thought overbaked it by a couple of minutes, it was moist and delicious!
  • The frosting is just as yummy as the cake!

This cake was declared a hit by the whole family and the neighborhood chocoholic relayed that it was the best chocolate cake recipe he had ever had . Not a single soul thought it was dry, despite that it could have come out of the oven at the 28-minute mark.

How To Store Pound Cake

The best way to store pound cake is to seal it in an airtight container and leave it at room temperature in a relatively cool part of your kitchen. It is possible to store it in the fridge to extend the shelf-life, however the chilly environment can lead the cake to dry out more quickly.

If stored properly, this Glazed Orange Pound Cake will remain in peak form for up to four days. Moist, packed with citrus flavor and make-ahead-friendly? Count me in!

What Makes Chocolate Mayonnaise Cake Different

Some people get a little put off when they hear the words mayonnaise and cake in the same sentence but trust me when I say the mayo is what makes this cake great!

Because seriously, whats the one thing that all good cakes have in common? They are delightfully moist without being dense and chewy and thats precisely the role mayonnaise plays in this recipe. You dont need any pro baking techniques to keep your cake fluffy and prevent it from drying out by adding mayo.

The Secret To The Best Cake Glaze

Chocolate Mayonnaise Cake Recipe

Of course no pound cake would be complete without an oh-so-sweet glaze. I flavor mine with orange juice and also include a splash of melted butter. The butter helps thicken the glaze and allows it to set once fully dried. It also leads to a more opaque color, providing a beautiful color contrast against the golden-brown cake.

Tips For A Perfect Cake

  • Use fresh ingredients. Baking ingredients like flour and baking soda, even cocoa have expiry dates on them
  • Grease and flour your baking pan to make it easy to serve
  • I use Hellmans Real Mayonnaise, but use real mayonnaise, not a salad dressing blend
  • Follow all of the directions carefully
  • Let the cake cool completely before frosting, or you will have a runny mess on your hands

As I mentioned above, Grandma was an amazing cook, raised on a farm, and had to provide hot and hearty meals to the farm hands every day for their noon dinner.

I can only imagine what time she had to get up to make the meal, since were talking early 1900s and no modern-day appliances to ease the work! Well fast forward to today and her recipes still live on.

Can Rum Cake Get You Drunk

Well, technically, yes. But lets just say, youd have to eat a lot of cake.

This rum cake contains a half-cup of rum thats baked into the cake itself and another half-cup that gets whisked into the glaze. Most of the rum thats added to the cake is baked off in the oven. Meanwhile, the rum in the glaze is dispersed throughout the whole cake. All this to say, youd need to enjoy quite a few slices to get any sort of buzz on!

Old Fashioned Chocolate Mayonnaise Cake!! Noreen’s Kitchen

Today Im sharing one of my best grown-up desserts: a boozy homemade chocolate rum cake, freshly dusted with powdered sugar and ready for all your holiday tables.

This chocolate rum cake is based on my Homemade Rum Cake. Its a chocolatey spin that has all the irresistible moisture and texture of the original recipe, with a flavor thats not too far off from my favorite Chocolate Rum Balls.

My recipe uses both oil and butter, as well as sour cream and buttermilk, for a mouthwatering chocolate cake that bakes up irresistibly fluffy with rich cocoa flavor. It pretty much nails the balance between the fudginess of the chocolate and the booziness of the spiced rum. The result? A dessert thats decadent and heady without being overpowering, and all kinds of delicious.

Why do I call this awesome chocolate cake recipe old fashioned? Well..

My grandparents lived on a farm and lived through the Great Depression. So Im sure you understand that they would use up everything they could, since you didnt know when you be able to get that something again.

Things like envelopes became note paper, and at some point, my Grandma must have come across an old financial ledger that wasnt being used.

So what did she do? Yes, youre right. Thats when she started to write down her famous recipes.

Or she would clip them from the weekly newspaper. Thats how I found so many of her old recipes, including this one from Hellmans Mayonnaise.

Many of these recipes were from the 40s and 50s, so maybe I should have used the word vintage instead. But when I think of my Grandma, vintage doesnt come to mind.

She was a delight, and certainly very old-fashioned by todays standards.

I remember visiting during the summer months and staying for a week or two. We always had so much fun, playing with the neighbourhood kids, catching frogs in the creek behind their house, watching thunderstorms in the summer porch.

And every once in a while, when it wasnt too hot, Grandma would bake. Often it was her famous Date & Nut Cookies, but sometimes, if my brother and I had been on our best behaviour, she would bake a Chocolate Mayo Cake.

We often squabbled over who would get the corner piece, you know the one with all that fudgy chocolate frosting?
