I will tell you that the ice cream churn makes the ice cream have a bit more volume than the no-churn method, but I love that an ice cream churn isnt required to make great ice cream! Meanwhile, begin making your blueberry sauce portion of the ice cream. I like to start with bright, fresh blueberries. Make sure they are well-cleaned and then begin making your sauce.

    • Regular granulated sugar will work here, too, if thats all you have.
    • If you dont have lemon zest handy , you can substitute two drops of high-quality lemon essential oil instead. These are the essential oils I use they are considered food-grade.
    • I cooked half of the berries to add a greater depth of flavor to the finished recipe. However, if youre in a hurry, just skipping the cooking and chilling and use all raw berries instead.
    • The large amount vanilla extract in this recipe actually helps the ice cream from becoming crazy hard when you refreeze it. Actually, any alcohol will have that effect, and since homemade vanilla extract is made with vodka, it fits the bill just fine. However, if you want to omit it, thats fine too.
    • You can serve this with crumbled graham crackers, or add some graham cracker crumbs into the ice cream maker in the last 1-2 minutes of mixing. Or put it between two crackers for an ice cream sandwich. I made my own graham crackers using this recipe.

    No Churn Blueberry Cheesecake Ice Cream

    This blueberry swirl cheesecake ice cream has 2 parts: the blueberry compote and the vanilla cream cheese ice cream base.

    This recipe requires an ice cream machine.

  • Ahead of time: freeze the bowl 1 day ahead.
  • Make the blueberry compote: add blueberries, sugar, cornstarch, water, and lemon juice to a small saucepan over medium heat. Once it gets going, turn it down to low heat and cook, stirring often, for about 4-5 minutes until the blueberries burst and the compote thickens. Transfer to a shallow bowl and refrigerate until completely cooled.
  • Make the vanilla cream cheese ice cream base: in a food processor or blender, combine cream cheese, milk, heavy cream, sugar, vanilla, and a pinch of salt. Pulse or blend until well-combined.
  • Churn the ice cream: Pour the mixture into the chilled bowl of the ice cream machine and follow manufacturers instructions. Every ice cream machine is different. I used my Cuisinart Fruit Scoop and it took about 20 minutes.
  • Assemble: Transfer half of the churned ice cream to an ice cream tub or container. Add half of the cooled blueberry compote and swirl using a knife. Then add the remaining ice cream, top with the rest of the compote, and swirl using a knife.
  • Freeze for at least 2 hours or overnight before serving.

    This no churn blueberry cheesecake ice cream recipe is quite simple in that you dont have to check on it and stir it occasionally while it freezes. It basically babysits itself which makes it even more convenient to make for your schedule.

    The trick is in the pre-churning that you do in this recipe. By mixing the cream cheese in a stand mixer or with a hand mixer, you are mimicking the churning technique you would create by using an ice cream maker. You are doing the work ahead of time.

    The additional folding of whipped cream into the ice cream mixture also lightens it and makes it smoother when it freezes. The texture is really lovely for not using a machine to create it. Once your initial work is done, you add it to the freezer for firming. That is all you need.

    How To Choose An Ice Cream Machine

    I love my kitchen gadgets and find that I use them often. Although I use the ice cream machine perhaps less than the air fryer or microwave, I do love it. Sometimes I prefer to make no churn ice cream and dont need the machine. For this blueberry cheesecake ice cream though, I do use it.

    An ice cream machine churns your ice cream ingredients to get the flavour and texture perfect and creamy. The machine has a bowl or container with a paddle attachment and chilled walls. It puts air into the ice cream mixture to make it as light and creamy as possible.

    Ice cream machines come in different shapes and sizes and with different price tags! There are 3 types of ice cream maker to choose from. A rock salt machine uses a combination of salt and water to chill the ice cream. The temperature drops as the machine churns the ice cream.

    Next up is the freezer bowl type machine which has liquid between both layers of the bowl. You need to chill the bowl for a whole day and night before using it to make ice cream. The paddle attachment will then churn your ice cream to perfection.

    Another option is the compressor type. These ice cream machines are the most expensive but they do save you time and effort. The ingredients for the ice cream are brought to freezing point right away and there isnt any waiting time between batches.

    Tips For Choosing And Storing Blueberries

    Color: Look for blueberries that are completely blue or deep purple, with no tinges of red. That silver coating you often see on blueberries is a natural protectantits a good thing!

    Appearance: Blueberries should be firm and plump. Avoid berries with damaged skin. Be sure to choose ripe berries, since they dont ripen after picking, but avoid berries that are soft, mushy or moist.

    Storing: Dont wash blueberries until you are ready to use themthe moisture will hasten spoilage. Keep unwashed blueberries in the refrigerator in a rigid, covered container. They should last at least a week, and maybe even two.

    Do I Need An Ice Cream Machine

    Technically, no. There are tons of no-churn ice cream recipes out there, but Im not a fan. The texture of no-churn ice cream isnt as great as that of churned ice cream, in my opinion. This blueberry cheesecake ice cream recipe requires an ice cream maker for churning. Its so much better!

    But first of all, what is churning? Churning is basically a method in which you add the liquid ice cream base to a container or bowl built with chilled walls and a paddle attachment in the ice cream maker, and then allow it to stir the ice cream in the frozen bowl. This stirring process involves incorporating air into the ice cream liquid base, yielding a creamy and light consistencya MUST for ice cream!

    No-churn ice cream uses a shortcut by folding in whipped cream , which is already aerated. This, in turn, provides a creamy and lighter texture to the ice cream. For some people this is great news, but in my opinion properly churned ice cream using an ice cream machine has much better texture and is creamier.

    Youd think Id be in the know a little sooner on days as important as this one, buuuut, in my defense, Im pretty certain theres a food holiday almost every single day of the year and I just dont have the energy to try to memorize all of those.

    Despite my love of food and all things dessert, I do have a life apart from food.

    Let me just being by stating how difficult it is to photograph ice cream. Especially when its the middle of summer and temps are r-i-d-i-c-u-l-o-u-s.

    The ice cream melts so quickly, and of course, once it melts it gets everywhere. You have to either photograph quickly or be prepared to take breaks and pop the ice cream back in the freezer and wait until its hard once again.

    Its a labor of love to share ice cream recipes , but let me tell you, this Blueberry Cheesecake Ice Cream is worth every single melted ice cream drip.
