Tips For Making The Perfect Vegan Pumpkin Loaf

  • Gluten free breads require more agents to rise than all-purpose flour. For best results, be sure to usefreshly opened carbonated water , and fresh baking powder/soda.
  • Use room temperature ingredients for best results. Especially if using coconut oil, any cold ingredients will harden the coconut oil and cause clumping in your batter.
  • Line your bread pan with parchment paper for easy removal.
  • Wait until this pumpkin loaf is completely cooled before cutting. Ive found that gluten-free bread is not as forgiving when sliced hot.

    Tips For Making Gluten

    Here are my tips that work with this gluten-free bread recipe. See below for my gluten free bread machine recipe.

    Don’t substitute anything in this gluten free bread recipe unless I specified above that I’ve tested it. This is important. If you substitute something I can’t guarantee anything and I can’t help you troubleshoot if something doesn’t work in your gluten-free bread.

    Ingredients at room temperature work best. You can always run your eggs under warm water for a couple of minutes to bring the temperature up.

    Read the recipe instruction and get all ingredients out before you start.

    Use dry active yeast or quick yeast. I use Fleischmann’s yeast: it’s labeled gluten-free. I’ve also used Red Star yeast.

    If your bread sinks in the middle before it is done baking you most likely let the yeast proof sit too long before using it or you let your bread rise too long. You want to put your gluten-free bread in the oven when it rises just above the top of the loaf pan, no longer.

    Make sure your water is between 95-110 degrees before adding the yeast. If you don’t have a thermometer I suggest you get one.

    Line the loaf pan with parchment paper and then spray it with oil, this will help you remove the loaf from the pan.

    Pan size matters. If you use a wider pan your loaf will be wider, and shorter. If you use a narrower pan your loaf baking time might change.

    Dish By Dish Tips/tricks:

    • The Gluten-Free Bread Dough Will Be Wet and Sticky: Dont be alarmed when you see that the bread dough is wet and shaggy and sticky and shapeless strangely resembling cake batter as opposed to the firm and shapable traditional bread dough. It is completely normal and desired to have a wet bread dough when making gluten-free baked goods, because this will ensure a moister crumb once baked. Please DO NOT add more flour in an attempt to make the dough drier or more manageable. Gluten-free bread dough, unlike normal bread dough, does not required kneading, so it doesnt matter that you cant shape it with your hands since it will go straight into the loaf pan and take the shape of the pan.
    • Extra Fiber and Binding Power: If you want even more fiber and more binding powder, you can mix in 2 tablespoons of psyllium husk powder with the dry ingredients.
    • Add Flavor with Other Flours: If you would to add a bit more flavor and texture, you can replace 1/2 cup of the GF all-purpose flour blend with brown rice flour, sorghum flour, millet flour, buckwheat flour or almond flour.
    • Pan Size Will Determine the Height of Bread: I like using an 8 x 4 loaf pan because the bread rises slightly more in this smaller pan. If you use a larger pan , just note that the dough will spread out more and as a result will not rise as high compared to baking in a smaller pan.

    I am not going to lie, I felt devastated when I found out that I am gluten intolerance. People who know me know that I live on bread and not being able to consume bread really makes me sad. Fortunately, since I used to sell gluten-free sourdough bread a few years back, I guess its time to start making them for myself again.

    Anyone who has done any sort of gluten-free baking knows that what type of gluten-free flours you use makes all the difference in the world. The gluten free all purpose baking mix by King Arthur is the one that will yield the best results. I would not recommend any other blend. Usually, with things like cookies and muffins Ill feel like you can get away with most all purpose flour blends, but not in the case of bread. I have heard that King Arthurs gluten free all purpose flour should turn out fine, in case youre in a pinch.     all caps, I AM SO EXCITED ABOUT THIS BREAD! it is a vegan baking masterpiece i tell ya! not only is the bread vegan, as per the title, it is indeed gluten free. run to the kitchen to make this deliciousness!

    its fluffy, baked all the way through perfection and the taste is 10/10. the ingredient profile is stellar by the way, no funky ingredients.

    oh my gosh, i am still in awe of this bread lol. heres the thing, i adore a fudgy dessert bread, ya know the one thats not baked all the way through.

    in fact, i live for that texture, but just when it comes to banana breads, chocolate chips, cinnamon roll, etc. however, this is a bread that i needed to be fully baked and fluffy.

    while this bread does have sweetness, it can be eaten savory for sure and thats actually how i recommend you eat it!

    gluten free all purpose baking flour is the main ingredient here and youre going to need two full cups.

    i used Bob Red Mill 1:1 gluten free baking flour, so make sure you use that or another blend with the same flours. you can of course try other blends, but dont expect the texture to be the exact same.

    also, the other key ingredient is YEAST! you have to use yeast if you want to achieve this texture, theres just no getting around it and personally, i love baking with it.

    the other ingredients youre going to need are unsweetened plain almond milk or any dairy free, maple syrup and avocado oil.
