How To Make Chocolate Banana Bread

1. Preheat oven to 350°F. Lightly coat a 8½ x 4½ loaf pan with non-stick spray and line with parchment paper. Whisk the flour, baking soda, and salt together in a medium bowl.

2. Place peeled bananas in microwave-safe bowl cover with plastic wrap and microwave on high power until bananas are soft and have released liquid, about 4 minutes.

3. Transfer bananas to a fine-mesh strainer placed over medium bowl and allow to drain, pressing on bananas a couple times. Let cool for 5 minutes. Set liquid aside for glaze.

4. Mash the bananas coarsely using a fork. Add butter, sour cream, brown sugar, eggs and vanilla extract and whisk together.

5. Pour the banana mixture into the flour mixture and stir until just combined.

6. Gently fold in the chopped dried bananas and chocolate chips.

7. Scrape batter into the prepared pan. Bake for 30 minutes, then rotate pan 180 degrees.

8. After about 45 minutes, keep your eye on the color of the top. If it is getting too brown, loosely tent it with foil. It should take about 55 to 75 minutes. The center of the loaf should read 200-205 F with a digital instant-read thermometer.

Can I add chocolate to this banana bread with sour cream recipe?

Yes! The recipe in my cookbook contains a variation for chocolate banana bread.

Proceed with the recipe as directed, but add ½ cup chocolate to the batter after adding the bananas. You can use either bittersweet or semisweet chocolate chips, OR roughly chopped dark chocolate . Mix until the chocolate is evenly distributed throughout the batter, then pour into the prepared pan. Sprinkle another ½ cup of the chocolate over the batter, then bake as directed.

Yes! You can add up to 1 cup of whichever nut you prefer to this recipe. I personally think it works best with walnuts.

Most baked goods that use sour cream also use baking soda. The acid in sour cream activates the baking soda, which acts as a leavening agent. The combination contributes to the softer texture of the bread.

  • Granulated sugar

My choice for this recipe is regular granulated sugar. You can replace it with other types of sugar if you want a different flavor, like coconut sugar or brown sugar.

If you want a more caramelized taste, use dark brown sugar that has more molasses. You can even use half regular sugar and half brown sugar.

Large eggs are standard in the US for baking, so this is what we will use.

  • All purpose flour

The nuts are optional, and my favorites are walnuts or pecans. However, you can replace them with macadamia nuts or even almonds. If you are allergic to nuts, feel free to skip them entirely.

  • Vanilla extract

Use the best vanilla you can get. I know vanilla is not a cheap ingredient anymore, but fake vanilla just doesnt taste good, and you might end up with a loaf of banana bread that has a weird chemical aftertaste.

  • Yogurt: Yogurt adds even more moisture to this banana bread. I like to use yogurt as much as possible when Im baking. Sour cream is a wonderful substitution for plain yogurt. You can use the two interchangeably in most baking recipes.

How To Make Sour Cream Banana Bread:

The full, printable recipe is at the end of this post. You will need an 8 x 4-inch loaf pan for this recipe. Line it with parchment paper and spray with nonstick spray. Preheat the oven to 350 degrees F.

Whisk together the dry ingredients in one bowl, and use a mixer to combine the wet ingredients in another. Combine the two, and dont over-mix.

Scrape the batter into the prepared pan. Slice a banana in half, and place the sliced bananas on top of the batter, sliced-side-up.

Bake for 45 minutes to 1 hour, until the bread tests done all the way through.

Okay, word on the street is that the more ripe the banana, the better. Like one expression I stumbled on said, A banana bread banana isnt yellow its black.

I disagree. Ripe, yes. Spotted brown or streaks of black, definitely. Completely black, no. I dont enjoy the overripe smell, for one thing. This is a personal preference and smell might be your best bet for figuring out what you like. You want to use the bananas before they have that trace of smell your nose identifies as rotten. No thank you!

How To Make Banana Bread With Sour Cream And Brown Sugar

  • Make a parchment paper sling. This is optional, but its helpful to get the bread out of the pan without any stress. To make the sling, cut a piece of parchment paper to be as wide as the long side of the pan. Press the parchment down into the pan so it lays flat. Greasing the pan first can help it stick. Leave 1-2 inches of extra parchment paper draped over each of the long sides to act as handles when youre pulling it from the pan, then trim the rest. Grease the inside of the parchment paper with butter or cooking spray.
  • Preheat the oven to 350 degrees.
  • Combine the butter and sugars. In a large mixing bowl, combine the melted butter, brown sugar, and white sugar. Whisk together until smooth, creamy, and no brown sugar lumps remain.
  • Add wet ingredients. Whisk in the sour cream, then add the eggs, one at a time, whisking well after each addition. Stir in the vanilla.
  • Add bananas. In another bowl, mash the bananas then whisk them into the sour cream mixture.
  • Add dry ingredients. Sprinkle the flour, baking soda, baking powder, salt, and cinnamon evenly over top of the wet ingredients, then gently stir everything together until no white remains.

    Can I make the recipe in a muffin pan to make banana bread muffins?

    You can, but I wouldnt recommend it. Banana bread recipes are made specifically for loaf pans to produce thick and dense loaves. As a result, baking a banana bread recipe in a muffin pan will result in thick and dense muffins. Baking this recipe in a muffin pan could potentially result in muffins that are too greasy or heavy.     How To Ripen Bananas Quickly

    There is a hack to ripening bananas at home. If you dont have brown bananas, you have two options: you can use regular yellow bananas and just mash them up really well. If you do this, increase the brown sugar by about 1/4 to 1/3 cup and add a pinch more salt. The other option is to line a pan with foil, turn your oven on to 300 degrees F, and bake yellow bananas for about 15 minutes until the peels are black. Let cool completely and then use for banana bread!
