    Using Greek yogurt in baked goods is something I do often. The yogurt acts pretty much the same as sour cream does but doesnt add as much fat or richness as sour cream does. The combination of Greek yogurt and oil in baking results in soft, moist cakes and breads. This easy banana bread recipe is flavored with vanilla and cinnamon and the tang from the Greek yogurt works perfectly with the sweetness from the bananas.

    But Im also trying to keep my sugar intake low, and most recipes Ive seen call for a cup OR MORE of sugar for a loaf. Thats way too much for me, friends. Especially since bananas are fairly sweet themselves.

    Thats why I hugely lowered the sugar intake AND used applesauce instead of oil. This lowers the calories, which means you get bigger pieces. And who doesnt want bigger pieces of banana bread?

    Tips For Making The Best Cinnamon Rolls:

    To get the best result with this recipe, I highly recommend using a sheet of parchment paper to roll the dough. While gluten free dough is still workable, it isnt nearly as stable and stretchy as regular dough using self-rising flour. Gluten-free dough has a tendency to break apart if you use just your hands. Using parchment paper mitigates this by holding the dough and filling together throughout the rolling process.

    Take your butter out of the refrigerator before you do anything else so that it can sit and soften while youre preparing the recipe. Youll be using melted butter for the dough, but softened butter for the filling.

    • Ive made this easy banana bread with and without chocolate chips. Both options are amazing though I think it breaks my husbands heart every time it doesnt have chocolate chips in it. However, if youre going for healthier banana bread, skip em. But if you are willing to indulge a little, throw those babies IN.
    • The applesauce. You can swap out the applesauce for oil vegetable or canola both work fine. The oil does intensify the flavor a bit because hello fats. Thats what they do. But I love this great with applesauce OR with the oil. So, if you want lots of moisture and great texture and arent afraid to skip on the traditional oil, do yourself a healthy favor and go with the applesauce.
    • Do not I repeat DO NOT over mix the batter. Just mix until there are no more streaks of flour and no more than that. I you mix it too much, the end result will be a spongy dense banana bread. When in doubt, mix by hand instead of using a mixer and if you do use an electric mixer mix on low speed.
    • You can keep this banana bread in an airtight container at room temperature for up to 5 days.
    • You can use less sugar if you want for a healthier version of this bread. I you want to use less sugar I recommend making sure to use VERY ripe bananas as the riper the bananas, the sweeter the bread will be.

    How Ripe Should The Bananas Be

    The more ripe the banana, the better for banana bread. As bananas ripen the starches turn to sugar, so an un-ripe banana will not be as sweet or as soft . Try to wait until your bananas have NO green left and are about half spotted. If your bananas get to the perfect banana bread ripeness, but youre not quite ready to make banana bread, simply peel them, toss them into a freezer bag, and freeze them until youre ready.
